Zombie Pigmen not being mobs anymore is half right. When people say were "removed" or "replaced," that is technically wrong. They were just remodeled/retextured into zombified versions of the Piglins, and likewise renamed "Zombified Piglins." So not actually removed, cause the code is literally the exact same, just a visual and name change. People just like to exaggerate or they genuinely somehow believe they completely removed the mob only to re-code an exact copy from scratch or something.

not gender, just the name changed from pigmen to piglin, and they modified the design slightly

Another week theory. Cows become mooshrooms because the mushrooms grow on them not in them that's why you can sheer them and tern them into normal cows. Most likely the pigs were a food source as crops don't grow In the nether. And it's theorized that extreme heat is what causes the mutation. As lightning is extremely hot killing the pig it strikes which is why ot becomes a zombie piggin, it's already dead when it changes.
