Thank you, Angel. I share my journey to inspire. Van Life and tiny leaving is for everyone. Unfortunately, there are not many fluffy girls out here that I know of living this lifestyle, so I started sharing my journey publicly to encourage and inspire others to live their best life. Hi Tiffany Thank you for sharing you Christmas Video. I have missed seeing you. Sound like you are doing well and look beautiful as ever. I went to a friend home, she lost her sweet mom this year and her children met in Maryland, she was going to be alone so I bought her and a friend, Jake who is like a son to her to have Christmas dinner. We all had a blast. Jake reaches piano and guitar. He played some amazing songs he wrote. I stayed 2 day it was like a awesome retreat, that I need so much. We have been friends and worked together for 17 yrs. I must remember to share your video with her.

I am eating a green salad while I watch you cook. I use two types of lettuce (what ever you like) plus fresh cilantro, I add diced baked sweet potato, diced hard boiled egg, two stalks of celery thinly cut, diced baked beets, half an avocado. I then add my home made mango curry dressing and toss. Then I move the salad to one side of my giant bowl, in the empty space I add 1/2 cup of warm homemade pinto beans. Over all of it I add a few walnuts and pumpkin seed and fresh ground pepper. Bon Appetit 🌷

@@comingout05 Mango Curry 1 cup diced mango, frozen or fresh 1 tsp curry powder 1 tbsp tahini 3-4 tbsp water 1 tbsp coconut aminos Let frozen mango thaw. In your blender, combine all ingredients and blend until smooth and desired thickness. 😋 I store it in a jar, it lasts several days in the refrigerator.

My daughter gave me a mini Bundt baker from Nostalgia. It bakes three tiny Bundts at a time. I just happen to have a Keto chocolate cake mix, so I’m going to make the whole box into batter and cook it all. I’ll freeze whatever I don’t eat, and keep Christmas in my heart all year long! Salad- spinach, strawberries, pecans with a sesame seed dressing. For Christmas Eve, we Just had grilled fajitas, rice, guacamole, grilled tortillas and jalapeños wrapped in bacon. We do American traditional only For Thanksgiving. I loved Coronado, that iconic red hotel is gorgeous.

Tiffany get you a Insta Pot girl and you can cook almost everything in it LOL. This morning I made me a grilled cheese on the sauté button, and it was so delicious.
