They add acid. Whey precipitates at its isoelectric point somewhere between pH 3.5-3.8

Put one gallon of milk into a pot on the stove get the temperature between 180 and 200 Fahrenheit add 7tsp lemon juice stir until it separates into a yellow liquid with white chunks in it .. pour the whole pot through a cheese cloth to remove the white cheese . Then dehydrate the yellow liquid in a electric dehydrator after it's done blend the dehydrated whey into a fine powder . Electric Coffee grinder works best . Add non sugar sweetener / vanilla or coco powder.....👍👍

It makes alot . You will have alot of cheese and whey liquid from one gallon of milk you will be surprised... has to be whole milk at least not 1% or skim won't work with that
