Hello Elaine! I am obsessed with your master dough recipe! Thank you so much for sharing it! I had ordered some round banneton baskets from Rosehill Sourdough before seeing this video. They say they are for 650-950g of dough. They are 9x9x3 and I’m worried they will be too large for your master recipe? Wondering if I should return them when they arrive and order from Shana’s Sourdough instead? Thank you for the help and advice. Jen

@@jennan3407 thank you so much! That is quite big, you can still use them but you’ll get a wider flatter loaf if you use that size of banneton 🙏🏻 Have fun! 🤩🤩🤩

In your book “the sourdough whisperer “ page 30, you mention the size of the banneton you use. I would be grateful to know if they are inside or outside measurements, please 😅 thank you

Today was a rabbit hole for me! I have been doing pretty decently with sourdough baking (family is so proud of my bread, and I am too LOL) Anyways, I was scouring KZbin for some reviews on the smaller 500 gram wood pulp banneton by Bulka because I am kind of tired of cutting a full loaf in half and sending it home with mother and mother-in-law... Tired, as in... I would prefer to just cut my recipe in half and bake 2 smaller loaves and send them home with a loaf they can cut when they like. I already bake with Bulka's larger banneton and love it! Came across your review... and you start talking about your "Baby Master Recipe". I wound up ordering your Sourdough Whisper book because the reviews look stellar! I really hope the "Baby" size recipe is in there because I cannot find it anywhere your website (its amazing by the way)... I did manage to find a comment somewhere on Facebook where it was said to be the same as the master recipe but only use 300g flour, 210g water, and 30g starter + desired amount of salt to taste. Would you say that is still correct?

Hi Daniel, thank you so much, I’m glad you found me and I hope you love my book 🙏🏻 Yes, the baby master size loaf is in the book, but yes, those are the basic quantities and it makes a perfect size loaf for your mother and mother-in-law to take one each 👍🏻👍🏻 I hope this all helps, do let me know if I can assist more ☺️

I noticed Bulka has an 8” and 9” round banneton. Which size is it? I thought I had the round but it’s the oval that I have. I so much appreciated your support by email about my deflated bread (but that tasted great) stating I need a bigger banneton for a 500g of flour. Well I am searching. I checked the referral below but they are sold out. So I am looking into Amazon and found 2 sizes. Thank you

I’ve made 6 loaves of bread so far , I cannot for the life of me get bulk fermentation right . I always over proof it or under proof it . I test all the things everyone says to check , they look right , the poke test , domed on top and pulling from the sides etc , I use a clear tall straight container to watch it double , etc . I’ve gotten 2 good loaves , the others were all flat and didn’t hold its shape . I can make sandwich bread , muffins , discard English muffins , etc etc all perfectly , but i cannot get a sourdough loaf to turn out right .!

It’s hard to fully help without knowing the recipe you’re using and more details. If you’re using my recipe I can help more, but a few tips: let your dough double in size, forget the poke test it’s not relevant with this type of dough, and make sure you pull the dough very tightly. @@foodbodSourdough so I tried your recipe last night , followed your video step by step for your master recipe , I ended up wayyyy over proofing it I’m assuming cause when I got up this morning at 9am , 10 hours total it sat on the counter with the temp around 74 degrees Fahrenheit it was pretty much back to starter form this morning .

@@foodbodSourdough oh and it never doubled in size . It did rise about 1/4 of the way . And had good air pockets throughout the sides of the container in the dough .

@@philomenekoenig1197 they tend to be the external ones but it makes very little difference as the cane bannetons are not very thick. It’s much better to use the brotform bannetons now.

@@foodbodSourdough I am so confused now with the word “brotform “. Just like you did this video, would you consider doing one different types of bannetons?😅 I was considering the wood pulp brotform/banneton ( as I read in king’s Arthur website that these words are interchangeable. When mentioning “brotform “, is that different from a wood pulp banneton/ brotform? So confused 😢

@@philomenekoenig1197 ‘brotform’ is the trade name, they are wood pulp bannetons, so brotform and wood pulp are the same thing 👍🏻

Elaine my bannetons come with a mesh looking shower cap type thing. Should I use this inside the banneton or use it like a shower cap and put it over the basket? I seen a video where the person lined the banneton with it?

Hi, I don’t use them or recommend using them, personally I’d use it for something else..
