Dark molasses nut bread is actually quite good, adding a little more flour until you have a thick ball to make cookies that almost have the effect of shortbread. Try it worth it

So, the reason your Elven Bread didn't rise is because your mixed the yeast into the dough straight away. When making a yeast dough, put the yeast in warm (not hot) water with the honey and let it sit for about ten minutes to wake it up. Then add it to the dough. Otherwise, your bread will stay flat.

Or the yeast may have been dead..proofing it in the warm water with honey let's you know if its still working. I tend to do that first before measuring out the rest because I never bake as often as I think I'm going to!

The adding the sugar and warm liquid to the yeast and letting it sit to reactive is called blooming and it's not necessary to do. All it does is makes sure the yeast in alive and active before adding it to the dry ingredients and finding out later that the yeast was dead or inactive. If the yeast is alive and you add hot enough liquid but not too hot to active them and have the sugar for the yeast to eat. They will produce the gases even if it was all added in at once.

Blooming the yeast in warm water is the best way to get a uniform fluffy texture. The yeast will still activate if unbloomed but you will get larger air pockets. The reason yours didn’t rise is because you added salt too early. It needs to be shifted with the flour before it’s added to the liquid mixture.

This!! 🙈 Like a lot of other people I got into making sourdough bread over lockdown (edit: had to be glutenfree which further ups the difficulty score). And WOW... That's a whole other journey of bread-making madness!! Bread really is more like biology/chemistry class rather than just cooking...? And a small change in every variable can affect the final result pretty drastically. Thank goodness for bread machines 😅 Admire Duke's bravery in just jumping in!

You should combine your two video's taste tester's guesses. In more words, you should have them guess twice: once just after tasting and then give them the option to change their guess after seeing them. It's cool to see how everyone guesses based on the flavor vs the appearance. Loved both of your cooking videos so far!!

I actually really appreciate that you're doing these recipes with very little background in baking - it really goes to show that trying complex recipes isn't as scary as it seems. Regarding the cream puffs, you did perfectly capture what it feels like to try to make the dough a first time. Until you've gotten some practice with it, it feels like a race against time. I kinda hope one of the species have macarons in the desert section. That's another one that looks intimidating, but if you approach it calmly, it almost always comes out fine.

Look, I've been baking my whole life - and both my parents are good cooks and bakers with different qualities. I would NEVER attempt cream puffs or petit chou (which to me are the same category of masochism), unless I HAD to. You nailed it on the second try - that deserves a gold star!

A couple os tips for any future bread baking endevors: 1 if the dough isn’t sticking to itself you can always add more milk or water(depending on what’s already in the recipe) until it is at a good consistency, 2 on the other hand if the dough is too runny add flour until it is thicker, 3 yeast has to be prepared before hand and you need to combine it with a ratio of sugar and water(it differs from company to company) then either heat up your oven and leave the yeast covered with a damp cloth and on top of the oven or set the over to a low temperature and cover it with a damp cloth in the oven for a little while, if the yeast isn’t activated and the dough is too thick it won’t rise and that’s what you need to make the bread soft on the inside and have air pockets I hope this helps anyone who may need this for bread baking

If you haven't yet tried it, I highly recommend making the onion soup from this cookbook! Unfortunately though, you would have to spend about 2-3 hours mostly just stirring onions and slowly caramelizing them. Another thing to keep in mind is that the recipe says "fresh thyme" and so you need much less powered thyme. After watching this video, I think that I want to tackle the elven bread next

Instead of an edit, making a second comment, those look DELICIOUS! Rising barely changes the size unless left for a day, it's more for letting the yeast develop so it's bigger after baking and you actually want to pulse the food processor, like a heartbeat. Overall, good video, very funny and you may have a paladin with the oath of throwing it back joining your team, can't wait for the main and dessert!

I absolutely love that book, when you get to the dessert section, the black pudding from the dwarves section is ABSOLUTELY P E R F E C T. I made it for my family for Christmas dessert and it was the best thing we ate that day. I prefer to only add the kaluha because my family isn’t that big of brandy, but that’s the only change we makes. Now the halfling sweet nibbles, on the other hand, I ABSOLUTELY love those cookies, but I make quite a few changes with it. Add chopped pecans, cinnamon, nutmeg, ginger, with coarse sea salt sprinkled on top. The sea salt really takes those cookies to the next level if anyone else has the book and wants to try that edit.

I remember when I made the cream puffs, we had to redo them 3 times. I ended up doubling the amount of dry ingredients because they never thickened otherwise (I don’t own a food processor so maybe that did it but still). So happy they turned out great in the end for you
