The first press is the best. Olive oil has an interesting history. It stretches back to antiquity throughout the Mediterranean, and they used to press it in big mats several times with several uses. The first, extra virgin was always the primo most prized for food uses, the next press "Virgin" was used for soaps and hair products etc and the last one was used for use in lamps. So not all Olive oils are the same.😊

It isn't just glass. You need to look for dark glass which protects the precious oil from light. Also, look for a single region of origin and not labels which identify multiple regions of origin. Moreover, a good olive oil will offer a harvest date as well as an expiration date. Also, look for a greenish color. If the color is yellow, it's likely a fake. The taste should have an olively, fruity, and peppery taste and it should slightly tickle the throat.

There was an extensive research on a Dutch tv program about this. I can clarify a few things. (The tv program is called Keuringsdienst van Waarde) All olive oils from today can be heated, extra virgin or not! Even if the packaging says otherwise. That idea comes from back in the day when olive oil contained other things, that made it toxic when heating the oil, but that's not allowed anymore. The only good olive oil is extra virigin, (that is the only label you should look for). This means that they used olives that were picked from the tree branches. If it doesnt say extra virgin, that means that they used olives that were on the ground, rotten olives, and then combined them and purified it (chemically if I'm not mistaken) so that it becomes a consumable olive oil.
@jaywhite1725

Actually extra virgin olive oil can be heated to high heat and does NOT become carcinogenic because it possesses certain antioxidants that prevents that. It is chemically stable at a high heat and is safe to consume.

Even when I was younger I instinctively knew to only buy EVOO in glass. I worked at a grocery store in New Jersey when I was in college and those trailers the groceries come in get so hot in the summer. I always figured if you shouldn’t drink out of a plastic water bottle you left in a hot car then definitely don’t eat food in plastic that’s being transported in hot tractor trailers. ❤

His stroke for life, his ability to make mountains out of molehills, and to be too excited about thing he's just discovered, means he has a very high signal to noise ratio. His excitement is contagious. But if you take him at his word your head will be filled on nonsense. People should watch him with a very critical eye. This goes for all the active content producers in this space. If you are posting every day you going to post a lot of nonsense. The most trustworthy people are the ones that post occasionally when they have something truly important to say. Dr Paul Mason is a fine example of this. Italian here. My grandma lived until 102. My granddad lived until 104. On my mum's side, my grandma lived until 96 and my granddad 92. I never once remember any family member or my grandparents fixating over the packaging of the olive oil we used 😂 It is about what you use it for and what you make with it. I've also been seeing utter nonsensical posts about coffee etc being bad for. All my grandparents drank espresso, and actually 3 out of 4 grandparents also smoked. I have an uncle well into his 80's and he probably drinks 8-9 espresso shots a day. Live your life, eat homemade good food and just try and not stress too much. And definitely not over whether your olive oil comes in plastic or glass for goodness sake.

DISCLAIMER You most certainly can cook with olive oil, all the nutrients and antioxidants are retained when heated. However it has a smoke point of about 200 degrees Celsius. This pretty much means that once the actual oil has reached this point of heat when cooking, it will begin to give off blue smoke. As long as there is no blue smoke, there is no problem. Don’t be afraid to cook with extra virgin olive oil

@orbifold4387

Well, I am not sure I agree with all of this. First of all, it doesn't matter if it comes in plastic container, as long as the bottled date is within three months from the date of purchase. I buy large 1-2 gallons in plastic directly from producers and keep them in a dark, cold place. Secondly, it doesn't matter if you heat extra virgin olive oil above the smoke point. That smoke is just due to the flavonoids, but it doesn't mean that the oil is oxidized. Actually, the higher the content of flavonoids, the lower the content of PUFAs, and the lower the oxidation. So for cooking the only sensible recommendation is to buy EVOO from a olive variety which is high in flavonoids, like Spanish Picual or Italian Coratina. Normally cheap oils are blends of mostly arbequina, which is low in monounsaturated fatty acids and high in PUFAs. Finally, most EVOO imported from Europe are usually a blend from crappy olive oils from different parts of the EU. In this case, always look for those which are 100% Italian, 100% Greek or 100% Spanish, and avoid the ones that clearly don't state "100%".

The smoking point of extra virgin olive oil is between 170°C and 180°C - this means it's perfectly fine to cook with, unless you're reaching the smoking point when heating your pan (for example by leaving it on a very high heat for a long time).Aug 25, 2020

Being the healthiest man in the graveyard is an admirable pursuit, but have you ever done a cost/benefit analysis on how much extra longevity you’re likely to glean by being this anal, against the time consumed by living like this, against the average age of longevity of a man in the USA being 78, against eating sensibly and exercising regularly? I am reminded of poor Charles Poliquin. A man that dedicated his entire life to leaving no stone unturned in nutrition, exercise and supplementation, and sadly died aged 57 of a heart attack.

You can cook with extra virgin olive oil and nothing will happen, it wont change yhe taste of food if heated, and if heated it will be oxidized just like any oil, but the part that is not oxidized will still be very healthy. This is much better than using an oil like vegetable oil which is bad and then oxidizing it for further damage. Moral of the story just use virgin olive oil for everything except deep frying.

This short is not unlike a potboiler in the literary realm, basically a filler. Paul needs to do a thorough video on EVOO. Paul is not getting to the major points in determining a true Extra Virgin Olive Oil. One being the oil should come from a singular source and have the harvest and expiration dates listed. One true EVOO is Australia's Cobram Estate. Sicily has the excellent "Partanna" which surprisingly is sold at Walmart!

If zero acre farms is correct with their data EVOO makes toxic bi-products in less than like 10 minutes of cooking then kinda slows down, but it punches above it's weight in toxic bi-products for the amount of pufa. (Edit: Not sure how I forgot coconut, it's better than avocado oil as it's highly saturated.) Coconut's still worse than tallow/ghee/butter though because of it's low stearic acid content. EVOO should probably only be used for lower pufa mayo and salad dressings. (Not that I think you should eat mayo or salad dressing)
