When I was teaching, the cafeteria was next to my classroom. On the Tuesday before Thanksgiving, the cooks did turkey, homemade dressing, and all the fixings. The smell was heavenly! I would find a moment to sneak in the cafeteria and get a bowl of hot dressing, straight out of the oven. The cooks knew I would do that every time, and they were ready for me. Special memories. Mom and Mamaw were always proud of their cornbread dressing. Now I host Thanksgiving for the whole family. Dressing is my favorite item on the table. I love sage and grow it, but too much will ruin dressing.

Good, wet dressing. It has to be almost soupy when you put it in the oven! Otherwise, you get dry, lumpy dressing! Good job :) Laurie, I marvel that our grandmothers cooked us the delicious meals they did with the old metal pans and just a spatula and a meat fork. I have everything from Le Crueset to German knives....everything kitchen gadget known to God and man and I cannot copy everything my Granny did. Her biscuits were divine and mine, though okay, will never be like hers. They were masters at their craft. At age 62, I am so fortunate to have had a grandmother and mother who came out of 1911 and 1933. I treasure the recipes written in their hands and the wonderful stories and good times we had sitting at the table while my grandmother cooked. Thank you for bringing back these memories for me. I still have my grandmother's old metal biscuit pans. They are ancient.

Food was different then. The chicken was free range and any feed was non gmo and organic, no antibiotics, etc. so it had flavor oozing! The flour was real. Heartier varieties and they ruined our wheat back in the sixties. The butter was more vibrant. Fruits and vegetables we're hearty. The cattle was clean and rich in iron and flavor. What we miss is real food. So we become like cattle at a salt lick or eating a barn trying to find what we're missing. We crave stronger flavors then we would eat less.

@@KBellaTruth i think you are onto something, Anna! I am so glad you posted this. I told my husband about a year ago that nothin tastes good anymore. And, it certainly doesn't taste as good as it did when I was much younger. I try and cook simply and using as much organic and fresh foods as I can find. Still...something is lacking. My grandmother also served up rabbit once a week in the fall and winter. My grandfather loved to squirrel and rabbit hunt. His favorite meal (from his childhood) was squirrel and dumplings. I had to pass on that on those nights LOL I just couldn't eat a squirrel but my Papaw had to have it every 2 wks or so throughout hunting season! Anne, I think the food processing is only going to get worse.

@@KBellaTruth , 100% correct. Unfortunately, the science has proved GMO's to be horrible for human consumption. Yet, they continue to use them for profit. I believe that it is depopulation efforts as well. I've read, but cannot attribute the author, that GMO'S are making future generations of humans sterile. God will win, no matter their efforts.

I do like to put celery and onions in my dressing, but I cut them fine and saute them in butter until tender before I add them. They seem to just melt into the dressing not causing the texture problem many people have. I don't put meat in mine, only because I like dressing more than the chicken or turkey. :) I'm from North Central Arkansas and am loving your videos.

My Italian mother always did it the same way. I’m not big on celery cooked into things, but by dicing it and the onions really tiny, and then sautéing them in butter til they’re super soft and almost caramelized, they do just sort of melt into the stuffing, adding flavor but not impacting texture. I really appreciate Laurie showing how to make a pan dressing. I’m not much of a home cook, but this recipe would be aces in the late fall or early winter, so I’m gonna give it a try. For those of us who are learning to cook it would sure help to have a summary recipe with all the details at the end of the program. There's so much native wisdom which I really appreciate because my mom was raised on a farm in Concordia Kansas but I wasn't interested in cooking until years after my grandma died and my mom wasn't cooking much. Dressing is my favorite part of Thanksgiving & Christmas meal. I Love the taste of sage, poultry seasoning, salt, black pepper. My Grandmother put half the giblets (which I no longer put giblets in my dressing) boiled eggs, celery, onion. I cook my celery, onions in butter until tender. I use broth from the turkey that’s almost done and if I need more broth I use the Better Than Bouillon Chicken Broth In A Jar (I Love All Of The Jars Of Better Than BouillonProducts) If Adding This I Don’t Add Extra Salt As It Is. My Grandmother raised her own turkey’s for Thanksgiving, & Christmas. I think I was 4 years old when she had me watch her harvest it and help her pluck the feathers. Love your videos they remind me of my Grandmother & her Love for our family. I Love Whippoorwill Holler. I Loved your sharing about farming cattle, pigs, chickens, gardening, living off the land. My husband passed away August 25, 2014, we also wanted to live off the land after we retired. I still live where we had 5 businesses all in agriculture. Cotton Harvesting, Pistachio Tree Harvesting, 40 Acres of Pistachio Trees on our home place, also A Machine Shop 70’ from our home place Specializing In John Deere Cotton Harvesters Heads. All of our businesses were successful. We live in Lemoore California in the country called the Island District of Lemoore. We live on the South Fork of the Kings River. I can look out my kitchen window 300’ is the South Fork of the kings River. Five miles North of our home is the North Fork of the Kings River. We were in business 37 years. I always use finely minced onion and celery cooked in butter until it's off and then everything added to the dressing. I also add fresh thyme fresh parsley and bells poultry seasoning which is been around forever and it's delicious! I love dressing so I'm going to make this next week! Thank you for sharing :-)

Lori I just discovered your channel last week. I grew up in San Diego! But my Daddy’s family is from St Joe, Yellville, Harrison. My Daddy was Mac McClain & owned Silverhill Canoe outfitters on the Buffalo River. I’m from the McClain/Smith heritage. So many of your recipes and ways bring back memories of meeting our kinfolk when we were small. We always made cornbread dressing & everyone loved it. Growing up I LOVED traveling the beautiful hills and hollers of Arkansas.. and my relatives made it all the more special! They were in Cushman, Batesville and Littlerock. The Clouse and Jones clans. Aloha ya’ll! We had this for dinner last night and I’ll be honest…2 out of 3 of us LOVED IT!!! I admit that I had to make some minor deviations, based on what I had on hand. 1. Didn’t have a whole chicken but I hit on a major sale of leg quarters so I used 3 of those. Plopped those quarters into my electric pressure cooker for 40 minutes. Talk about fall-off-the-bone tender! Next time, I’ll try it for 30 minutes. 2. Since I knew the resulting broth would be strained, I added fresh onion and celery, rough chopped. I was sooo tempted to just add them to the dish, but nope! I wanted to follow you as best I could. 3. No leftover biscuits, so I made 4 slices of toast. 4. At the last minute I decided to add a can of drained corn. 5. I still had some broth left over, even after making the gravy, so I poured the rest into an ice cube tray for future use. 6. Wound up baking it for 40 minutes because it was still too mushy at 30. Thank you ohhh so much for sharing your recipes and skills with us. Now I will be perusing your channel to see what’s for dinner tonight, lol. Your channel is helping to make our mandatory Stay-at-home through this pandemic a whole lot easier to get through, not to mention the memories you conjure up for me of my Mom and Gramma. I hope you, Mr. Brown, and all your loved ones are staying safe and healthy…so far, so good for us here in Virginia. BTW, we have that very same bird feeder in our backyard!

That's what I do, I cut onions & celery very fine pieces, I don't like big chunks of either in there....it does make it taste better than just using onion powder....I do use onion powder in a lot of things and honest I can't even taste the onion....to me it doesn't even have a taste.....I even use it and garlic powder when I make an omelette and you just can not taste either.....and my spices both are fresh, but I get them from Sam's , my Daughter & I share whatever we buy in spices....but maybe their spices aren't as potent as some you buy at Kroger...you can get a large container at Sam's for what Kroger wants for just a little bottle.....so that's probably why the taste is not as good.... I know I use cinnamon in my oatmeal and I put a lot, and it just doesn't have that good of a taste.....it may just be me LOL.....

I use green onion too, but saute it with celery in butter the same way. I also put raw egg, cooked eggs, fresh thyme and sage & a couple apples in and bake in all in the oven like a casserole. It's divine.

I run my bread through the food processor so my dressing isn't lumpy. I also add a can of undiluted cream of chicken soup to the wet ingredients. I started that about ten years ago and love the texture it gives my dressing.

I have a friend from Hardy, Arkansas, she asked me when I was 25 yo to make dressing for her to take for Thanksgiving to her family's home. I made giblets gravy and as we were carrying it out the door to her car, she tripped and spilled gravy all over my porch and steps. Keep in mind I live in Memphis in a neighborhood with 3 little kiddos and she had 2, what a time we had cleaning and fighting kids! Lol, love your videos. I'm 63yo now, memories are wonderful!

I've been cooking for 50 years. Have made plenty of dressing, but I cook my onion and celery in broth before adding the rest. Just have to have that flavor. I haven't made chicken gravy by your method, but will try it next time, looks and sounds so much more flavorful. Thanks for teaching an old dog a new trick! LOL. :)

My husband would panic with that many trees that close to the house. We we moved on our land he cut all of them down. One year we had trees falling everywhere from the weight of the snow. I was glad he did cut the close ones down. We live in the WV mountains so we still have plenty of trees in our hollow or holler as they say here. I am from Louisville, Ky which is a far cry from our holler. It took me a long time to get use to country living and not having a store close. Your dish looked very good. I grew up with my Grandma’s dressing, but it wasn’t a cornmeal based dressing. It was a bread dressing (stale), with sautéed onion, celery, maybe mushrooms, poultry seasoning a pinch of sage, poultry seasoning, salt, and pepper, eggs, chicken broth and cooked pork sausage. So the first time I had cornmeal dressing, I was SO disappointed! It was so different than what I was used to and the texture bothered me. But as I’ve gotten older, I have grown to like it, but I still prefer my grandma’s recipe and make it for Thanksgiving. I’ve never had or even seen a casserole style of chicken and dressing, but after watching your video, I’m going to try it once fall gets here! It made my mouth water! Your friend is one lucky woman to have you in her life! 💕

My Gramma’s dressing was like yours... with pork sausage. Gramma was from Ireland and lived in Massachusetts. I had never had cornbread dressing until I moved to Texas. I’m still not crazy about it. When we were in London we went to a museum that had old English kitchens set up. There was a recipe dated in the 1600’s. It called for a bread and sausage dressing! So it is a very old recipe! And, of course, corn was NOT part of an Early English diet! 🌹

When you got choked on your cornbread, it reminded me of a memory from many years ago. When my son was little, (about 7 years old) he asked my late husband if he could do something another, and my late husband said, "when you can eat cornbread without choking you can." He was from Chesapeake, Virginia and that was a saying they said a lot. So about a week later we were eating cornbread with our dinner and my son said afterwards, "I ate my cornbread without choking, can I do whatever it was now?" Mrs. Lori, this video was so amazing. It brought back so many memories of my Mother and Grandmother. We were a no sage family though but I do like a little taste of it. I have not tried making this since my Mother passed but I intend on it. I love how you set the camera up I would like to do that sometimes but my cabinets get in the way of the tripod. I might have to get a taller one. You are such a pleasure to watch. We also added the boiled eggs and I think I might skip that part too. I found a recipe from the New York Times so I thought about combining the two recipes. Your chickens are beautiful. That is one thing I would want if we ever got to move to the country. You are an amazing person and you also give great tips about cooking. So glad we found each other's channels. Sorry, I know I talked your head off today. My husband and I don't like a lot of sage either in our dressing. We did have that experience with someone from our childhood adding too much sage . My stepdad'a mother is the one that ruined it for me , but I can't remember who it was that ruined it for my husband . lol...!! It can be over powering . I do love to watch Miss Lori cook though. I learn something new just about every time I watch her videos. She has the best mannerism. 😉❤

My kids didn’t like the onions and celery either so I started sautéing them in butter and then I put some broth in my blender and blended those veggies right up and those kids never knew that dressing had all those onions and celery in there, he he!

My Momma did the same thing & to this day my little sister swears she doesn’t like celery & onions in her dressing! And Momma always put boiled eggs in her giblet gravy! Soooo good! 🍴😋

I was a teacher. There were a few thing that I absolutely loved from the school cafeteria. One was their dressing which tasted alot like my mothers, their rolls, and chicken spaghetti. The chicken spaghetti did not have tomato sauce in it. I have tried to find that recipe, but could not. If you happen to know how to make it, please show us how. To get the strings off, take your potato peeler and destring it . It is still crisp and tasty.

Great idea putting seasoning in the cornmeal. I always added it in when mixing everything together. But I also added a can of cream celery and a can of cream of chicken. Along with the broth. To keep it moist.

I love egg salad with a little celery and onion in it, but my granddaughter won't eat it that way. I use your trick of celery seed and onion powder in it, and she'll eat it that way. And oh my Lord those chicken bones! I could be so careful deboning a chicken, but yet when I put it in the soup or if I make chicken and biscuits my granddaughter will always find a bone! I could have seven people at the table, and she'll be the one to find it! 😂 I'm going to try your cornbread chicken and dressing very soon! It looks delicious! Thank you Miss Lori! ♥️

Loved the recipe. My sister's mother-in-law taught me the trick to dressing was to add more broth. My grown daughter doesn't believe in that theory so we always have the debate w/me saying add more broth. Can't tell you the pleasure I got when I showed her your video. I have never had it like that. I am definitely going to try it. My Mom always made the dressing, put the chicken in the pan, stuffed the chicken, and put the remaining dressing in the pan around the chicken. The chicken was whole so the juices that came off it while cooking added even more flavor to the dressing. I do love onions and celery in my dressing. I cannot wait to make your recipe. My favorite thing about dressing, is leftover dressing. Cold or hot. Sage or no sage. Celery and onions or no celery and onions. The only reason I don't put boiled eggs is because they get hard when you reheat the dressing.

My mom’s dressing was the one food I really wanted at thanksgiving and I haven’t had any even close to hers but this is how she made it!! I hear you. I also love country life but my husband is also city. I so much would love to have chickens and be able to listen the sounds of cows and chickens. Oh well it is what it is. I try to have my house as country as I can. Hang out clothes on the line and have a small garden and lots of trees and birds. So I understand how you feel! Blessings!

My mama used Aunt Jemima cornbread mix too. so good! I dont know if you can get Tenda Bake there, but I really love it too. I started using it when we lived in North Carolina.

What a great video! If you can find yourself one of the OLD crockpots, it cooks at a lower temperature than the newer ones. I much prefer the older ones, the only problem is they weren't made very big back then.

Lil tip you might like after I put my broth in dressing to where I like it . I put it in my pan then I pour more broth just till you see it getting wet slice up some butter place on top then let her fly. I do mostly how your doing it . I really blessed I found your channel. I’ve need to find mores for slow cooker I’m not to good at finding some recipes .God bless.

Lori, I just recently found you on You Tube. Girl, I am thoroughly enjoying listening and watching you. Wow, my mom used to cook in the cafeteria and she was an amazing cook herself. I married a man who would not ever let me cook from the day we first met. Long story, but that's what he wanted and after the years; I forgot how to cook.
