The thing about stones and ice is that stones (or stainless steel) retain sensible heat, which is MUCH lower than latent heat (the energy needed to change phase, eg evaporation or melting). For that reason, ice will ALWAYS be superior at lowering the temperature of liquids, albeit at the cost of diluting them... unless you contain the water! Grapes were a neat trick! On the other hand, stones add mass to a drink, so they take more time to change temperature altogether, so both ice and stones can be added together to keep the entire thing cold for longer (even after the ice is gone) without much dilution (that is, without adding MORE ice to it just to keep it cold)... at the cost of increased dead volume (you fit less booze in a cup).
@PeterReid19932 жыл бұрын
So what I’m hearing is just add more booze

I’ve seen stainless steel whiskey “stones” containing essentially cold pack liquid inside (so you get phase-change energy and it’s still easy to clean/doesn’t pick up weird flavors).

@@DrDeFord I have some stainless steel ones like that. Didn't know they were that way till I shook em once and heard fluid in them. Searched em for a crack, but found none. No smell of mold or anything. They were a gift, of course. Looked em up and they do just as you stated. I like to toss two into a whiskey that might be a little warm from Arizona heat in the apartment. Brings it down just a few degrees so it isn't warm anymore.
@remander38732 жыл бұрын
@@DrDeFord I use these. Sometimes, I want the whiskey chilled without being diluted by melting ice. I just store them in the freezer. All it takes is one "stone" in a 2-3 finger pour and a few minutes.

The stone ones also can scratch up your glasses as they age.
@wickdghost36399 ай бұрын
I have stainless bullets that are for whiskey chilling. They work a little bit but only once then they warm up but if you use half of them, then for the second glass you swap them out, because they're stainless steel, they chill down super cold super fast and are ready for the next glass unless you're shooting them down quick obviously but in ten minutes, they are back to frosty cold again. And I also have a belt buckle flask dispenser 🤣 but the dispenser is a pain in the ass to clean the little canisters... Cause mine has little clear canisters that have three finger crosses that to press up with a glass or shot glass and it automatically fills instead of having to pull a lever. It's cool but if you don't clean one when it empties right way it's a nightmare

I was just thinking about the smoke thing a little more in depth when I was replaying this video back in my mind. In order to make something taste smoky, you'd have to add smoke that had been distilled into liquid for it to be little more than perfume. I've heard of people using smoked grains for beer from cooking shows in addition to the whisk(e)ys on this channel. That got me to think of what would happen if liquid smoke was used in a whiskey as aromatic bitters in cocktails. I can't imagine you'd need more than a drop or 2 in any glass. How would it change the experience? Experiment, I say!
@RS-6862 жыл бұрын
I think you may have to dilute the liquid smoke. That stuff is super strong
@MrJhchrist2 жыл бұрын
You can bubble smoke directly through liquids, no need for distilling. Imagine a bong. The products exist. Matter of opinion if it's better to make a liquid smoke or to smoke the air and glass, we do of course taste with our nose too.

my sister got me the smoker for christmas last year, there's some tricks to it. sometimes even though there's a lot of smoke, sometimes the whiskey doesn't pick up much flavor. I find that if I'm making a cocktail that uses a simple syrup, i'll put that in first with the ice and smoke that- THEN put the other whiskey/liquor in there. gives old fashioneds a twist. works best with a butane torch, don't even think about a regular lighter or match- you really gotta have the flame blasting through there to get the smoke going and non butane lighters will leave an awful aftertaste.

If you kept the whiskey stones in a deep freezer (sub 0) they'd likely work better and not dilute. I'm not sure that'd really improve the overall, since the melt from standard ice also allows more aromatics to release, much like adding a bit of water.

There's more to rapid aging than high pressure and wood chips. The technology dates to the late 19th century (hurray for old distillery manuals). The older version included oxygenation, temperature cycling, yes some vibration, and a couple other things I can't remember offhand. It worked, but it was way more expensive than just letting booze sit in barrels.

The size makes it so they actually cool pretty well and don't hit your teeth when you drink, but it does feel like it will break the glass if you aren't careful.
