Make a trip to Cleveland, Ohio. Go to this great little spot called "The Butcher and The Brewer" and get their Albino Stout. Hands down the best Coffee beer. It is all that rich coffee flavor with no bitterness.

You do realize that there is no actual need to distill the coffee to get the flavor? Infusing bourbon with coffee also works really well. Just leave 200 grams of good whole bean coffee (I use a nice dark roast) in a bottle of bourbon or rye for few days (to taste) and it infuses the bourbon just like a cold brew. As an added benefit, it also creates some bourbon infused coffee beans too. For a great cocktail with this, use the infused bourbon to make a boulevardier. (2 oz infused bourbon, 1 oz. Carpano Antica, and 1 oz. Campari.) The coffee flavor adds a deal nice complexity.

Once while drunk I made a pot of coffee and accidentally poured it entirely into my water filter pitcher. The final result was perfectly clear water that tested 000 ppm of anything in it. It tasted exactly like a cup of coffee. I took this as a sign that water was always meant to be coffee.

This is really interesting! I wonder if the nose and tasting notes you found in the spirits matched those described on the coffee bean you used in your cold brew and roast level (assuming you roasted your own beans). I also really wish you would have mixed the three cuts together and given that a nose and taste... the different aspects of the coffee together might really be something more (or less) than the sum of the parts.

Acre distilling uses one of their whiskies as the liquid to make the cold brew. So the final recipe is whiskey, coffee and simple syrup. They over sweeten but that with an extra pour of just the whiskey is phenomenal! Add just enough cream and it can be served hot or cold. So how would different brewing styles on the coffee impact what they just did here?

Vodka and cold brew mixed together tastes sweet to me. I think it sort of tricks the tongue. The phenomenon is there with other alcohols too, but too often the flavors clash so much I end up thinking more about how it would have been better to drink the two separately.

The coffee will have different notes depending on where the bean comes from and how it is roasted. The roasting process will give you different tasting notes.

I would like to see you make a mocha liqueur with the distill of coffee, cacao nibs and your vodka and mix that with simple syrup (cane syrup) and create a mocha liqueur.

There’s an easier way to do that which doesn’t require distilling. In a grinder, grind up your beans and cacao nibs (and anything else you want for flavor, like spices). Throw all that in a coffee filter-lined strainer and set that over a quart container. Take an over proof spirit, like everclear or even Wray and Nephew over proof rum, and pour it over the grinds. Let it filter until the grinds are dry, then repeat the process 3-4 times (depending on how concentrated you want the flavors). When you’re done, add enough simple syrup to top off the quart container until it’s full. Stir to combine, and now you have a full-on mocha liqueur. If it’s too strong, cut with water.

It would be interesting to see if fermenting and distilling the fruit of a coffee plant does anything. After a quick google search, coffee fruit juice does seem to be a thing, but the brand I'm looking at seems to have other stuff added, so there doesn't seem to be a straight coffee fruit juice; frankly it seems like some kind of bogus health drink. There's also coffee fruit tea apparently, the amazon page I'm looking at doesn't seem to list or have a photo of nutritional info or ingredients. The tea seems like the best bet, as it seems coffee fruit is not commonly sold.

The fruit is probably too astringent to be palatable. You could probably use the rinds/skins of the fruit to make a tepache-like fermented drink, but then you’re adding sugar and (possibly) other flavorings. It sounds as if you’re interested more in fermenting coffee fruit juice and distilling that

Why cold brew? Why don't you take really good coffee with pleasant aromas and pour it with hot rye mixture before distilling. This is how you cook your coffee with the base material and then filter the solids according to e.g. 30 minutes out. Then you distill your whiskey and put everything into barrel maturation. This is how you make a hot extract of the coffee, which then adds its aromas to the base material before distillation. This means that bitter notes are less than if the Coffee powder is in there during distillation. Option two would be to make really good mocha coffee and add it to the distiller.
