There is a brand that is already doing this by Infuse Spirits. They take young whiskies and mature and finish them in steel barrels along with wood chips. It's actually a fairly decent whiskey too. The Broken Barrel is the main one I have tried, but they started out and made their name with Vodka. Which is making me wonder if they are barrel aging the vodka as a "whiskey" an then doing that process of finishing in steel barrels. Taht would sorta make sense.

Can you Guys please try stauning whisky, its a danish whisky which is made just like old days in scotland. The malt is floormalted, then smoked using lokal peat, actually everyting that goes into the whisky is made at the distillery included the malt. And at last it is also distilled over open fire. They make the best rye i have ever tasted, and their peat whisky is also phenomenal.

Two cheers for all those US whiskey regulations. I can imagine that they're a pain in the butt for distillers, but they allow knowledgeable consumers to know (more or less) what we're buying. Compare and contrast with, e.g., Japanese whiskey, which is much less regulated and consequently much more mysterious from a consumer perspective.

Do around the 9min mark they were talking about adding wood staves to a metal barrel, and aging whiskey in it, and what it would legally be called. What if you made a new cask from a bunch of different used staves, (like a sherry cask, an oak cask, etc) and used that to age whiskey in....what would that be legally? It would be 100% a normal traditional barrel, but just using a collection of different used staves.

I wonder if it is fair to say that higher proof typically brings out the sweeter notes in whisky, e.g. fruits and sugars, and therefore balances them better with your tannic notes, e.g. spices, oak, and smoke. Will have to drink more whisky to find out. 🥃

Further to the discussion of aging whisky, if you are doing the 10 second aging trick, if you just pour new make through a barrel which drains out the other end, how long can you do this until the oak is no longer considered "new oak"?

Hey Dan and Rex! Love your channel. Have been listening now for a couple months, still have a LOT of catching up to do. But I have to say THANK YOU for making my whiskey journey much more fun and interesting! I’m curious, I’ve seen a couple videos where you mention whiskeys going bad once they drop to 1/3 volume over several months due to oxygen. My question is, could you transfer a really special whiskey you know you don’t want to drink too quickly to another enclosed glass bottle, like a 325ml decanter, once the original bottle gets to half, extending the life? Cheers! 🥃

When I saw the comment about the steel/ wood slat barrel, the main thing I wondered about is how the steel would impact the whiskey. Would the steel give any off flavors to the whiskey? Would the steel allow the whiskey to properly move in & out of the wood?
