If aging is in part the interaction of newly formed substances (and not merely the addition of flavor from the wood), why is it that once bottled, whiskey no longer changes?

Someone during the live stream asked for a recommendation of ASM for a bourbon/rye drinker. I don't know if they're reading the comments , but I assume there's many people out there wondering about American Single malt. I've had quite a few of them in the last couple of years, and I think I have at least 15 bottles in my collection right now. Honestly , if I were to recommend an American Single Malt to a bourbon drinker, it would be Westward, out of Portland, Or. Any release . If I were to recommend an American Single Malt to a Scotch drinker , it would be Westland, out of Seattle. And speaking of Westland, if you can find any of their single cask releases, seriously, just go for it! They're kind of expensive, (all American Single Malt is expensive, at least compared to bourbon) but they're really special!

Almost 200 different whiskies were tested by Suntory’s chief blender for Scotch, Calum Fraser, and Suntory’s blending team, to create Ardray."

I think the problem with experts is that so many have abused their positions - especially when they use it to drift outside their area of expertise. Other times, people without the expertise present themselves as experts. Back when I was in the Navy, I had to explain to people that I had no issue with authority - but I absolutely bristle at people trying to assert unearned authority.

Edradour is amazing, probably cause I like black licorice! It was the only distillery I was able to visit on my only trip to Scotland a few years back. It is picturesque with super friendly staff. Highly recommend it, either to visit or drink their product. One of my faves for sure.

Whiskey aging is almost like dog ages. A 7 year old chihuahua is a fairly young dog; a 7 year old Great Dane is much older. A 15 year old chihuahua isn’t uncommon, although it’s considered old; 15 year old Great Danes have probably been dead for multiple years. The same can be said for a 7 and 15 year old scotch versus a 7 and 15 year old Texas whiskey.

The marketing for this bottle is very confusing. It's expensive. $90 for a blended Scotch without an age statement or Johnny Walker color history? Since it's a blended Scotch it must be from Scotland but the box says blended by the Japanese Suntory blending team. I guess it's a blend of the Scotch brands owned by Suntory but for $90 I'm not intrigued enough to find out.

Ardray is a blended Scotch whisky in the strain of Japanese whisky blenders. It is a Suntory product, if that makes a difference.

I think Edradour 10 year old (Signatory bottling) and this Ballechin 10 are underrated. The sherry in Edradour is top notch and very value for money for craft whiskey. Ballechin 10 is equally delicious for peated Highland. I found 15 cask strength editions to be too funky and not for the initiated, but Edradour 10 is really great.

It’s a “blended Scotch” so a mix of malt and grain whiskies originating from multiple distilleries such as Laphroaig, Bowmore, Glen Garioch, Macallan, Glenrothes and Highland Park. It is also Non chill filtered and natural colour. Slàinte!!

Just drove back from Chicago, where they have way bigger variety of Irish whiskey on the shelves, and I brought back a shameful amount to Virginia that we can't buy here. Two of the many bottles were Method & Madness varieties and as luck would have it, they did NOT duplicate the only other Method & Madness I had already brought back - so I have three different! I love all the ones you mentioned. My collection is at about 50 different whiskies, 4 of which are Scotch and maybe 6 bourbons; The rest is Irish. Keep up the excellent work.
