I used to grow miracle fruit, the fresh ones work even better when I tried them! the berries are super sweet and creamy. makes everything sour taste like sherbert.

The way miraculin (the chemical in the berries that is special) works is it just blocks the sour and bitter taste receptors on your tongue and because you can't taste the sour or bitter, the sweet just comes to the front. The berries don't actually change the flavor profile, just mask a portion of it

Oh man, Rex ate the berries whole? Might've inhibited the sweetening effect by coating your mouth with oils and other things from the seeds. Might've been part of why the warheads got you so bad. Either way, thank you for testing the effect with whiskey! The more foods it gets tested with the better we figure out where to use it in culinary practice.

It would make it worse i think. I am into gin and botanicals, so id guess some flavors are best left sour and herby. I think anything miracle fruit related would be best used for wine(especially dry wine) and tequila..maybe some types of brandy as well. Angosture bitters is a maybe. I think it may end up tasting like campari or aperol or something. But i wouldnt pair them with anything already sweet or herbal/sour/

Presumably the aging of the whiskeys increases the sugars (complex sugars) in a Whiskey? And therefore they come through more with the pills. So the cheaper and therefore younger whiskeys literally haven't had the time to get any sweetness. I remember a winemaker telling me something about how her Rieslings just got sweeter and 'oil-ier' with age as the chemistry inside the barrels just worked that way.

You get wood sugars, wood tannins, and things that break down into caramel and vanilla out of barrels. The longer spirit sits in the barrel, the more it extracts; as Daniel's said several times on episodes the rule of thumb is that barreling at comparatively higher proof gets you more of the bitter tannic wood compounds and putting the spirit in the barrel at relatively lower proof promotes the extraction of wood sugars, and obviously letting a spirit sit in the barrel longer will give you more of everything compared to spirit that's only begun aging. Conceivably a distiller could find the optimal alcohol % to put the spirit into the barrel at in order to maximize wood sugar extraction in a long-aging whiskey and produce a very sweet and caramel whiskey with comparatively little tannic wood notes for the age. It's likely that at least some whiskies around the world may have been distilled with at least this overall idea in mind, if not trying to maximize the sweetness to the exclusion of all else. In a related thought, most of the big distillers in Canada distill each grain separately and begin with aging a high-proof neutral grain spirit (that's essentially vodka at the start) as a base and then distill, age, and blend in lower-proof flavouring whiskies; this practice is also found in Japan among Nikka and I think Suntory, with a high-proof neutral base whiskey and key (flavour) whiskies blended in. While not every Canadian (or Japanese) whisky is going to be sweet and complex, it might be worthwhile experimenting with miracle berry tablets and more-aged Canadian whiskies (if you can get them).
