Thank you for making a recipe in a homesteader kitchen that's not all home grown/canned/dehydrated/cured/fermented etc. I have a farm, do all the home cooking stuff and almost never eat out, but that kind of cooking can be overwhelming for people who really need to learn how to just make food at home. With the very best of intentions, I think some KZbin homesteaders have inadvertently created a standard that's hard to achieve. Like teaching at the PhD level to folks in middle school. You did a good job.

Love this “The goal is not to make the best food ever, it’s to not eat cereal for dinner.” I feel like this is where my husband has gotten hung up on learning to cook. I find my self constantly repeating that we’re making it this way to use up what’s in the fridge. It’ll all be edible. 😂❤

Until yesterday, I had never made it. My husband always turned up his nose when I would mention making it. Well, I made it yesterday without telling him what we were having. Much to his surprise, he loved it. Of course, I made it spicy to his liking. I used a can of Rotel tomatoes with haberno peppers. Also, about 30 minutes before we used cubed a block of cream cheese to make it a little creamy. It was an easy, delicious meal. It made a lot so I called my son and he stopped by for container to take home for dinner. This is definitely going onto our "do over" list.

I’ve been making my white chicken chili for about 20 years. Found it originally in a betty Crocker warm meals magazine. I’ve tweaked it some over the years. It’s shredded chicken, chicken broth, cream of chicken soup, white northern beans, green chilies, onions, red bell peppers, cumin, oregano. I make my own cream of chicken and chicken broth.

@@oweunuffin2252you can throw dry beans in but make sure you have plenty of fluid and give it plenty of cooking time so the beans get soft

This sounds delicious, Jess. I love how you give info about good/better/best, and clearly talk about what you are doing vs what you could do for a recipe. It really helps people making cooking decisions when they have a bit of this knowledge under their belt to know what they can do to still make something yummy but also save time, or if they have more time the things they can do to oomph it up more. As someone who thinks black pepper is hot and doesn't like huge chunks of onion, hahahaha, I appreciate you talking about that. I still will eat stuff that is hotter and includes onions, but it's nice to hear someone try to explain how they deal with that. I love onion flavor, just not actual onion so much - so the smaller it is, the better. 💚💚💚

I love white bean chili, but it has been a while. I got my recipe from a lady that I used to work with. Today, I made homemade chili and cornbread. I feel you on running kids around. My 4 kids are grown, but I used to work an hour away, come home, and grab the kids and drive 45 minutes for 2 in dance class, the 2 oldest doing football or wrestling plus then there was Cub Scouts, Boy Scouts, and Girl Scouts plus I decided to take dance class. (4 days out of the week was run, run, run). I look back and wonder how did I do all that. I would have meals to go so we did not eat out all the time. We moved, and though I worked, my kids were very active - from Scouts, football, dance, gymnastics, karate, and theater. My one son was telling me during the holiday while I was visiting, he could not believe how I was there for all their events and did what I did in getting them there. My ex helped out in Boy Scouts but was absent for everything else. I guess the difference was when he was a kid, he did activities. When I was a kid, I was always told no, so I wanted the kids to do things I never got a chance to do. I am so glad that both you and Miah pitch in and are supported in the kids' activities because it really can run a person down trying to do it by themselves.

I had white bean chicken chili for lunch two days ago. Fast food since I canned the chili about 16 months ago. I love it. I first had it in MN at a restaurant while traveling for work about 15 years ago. I put some sour cream on mine and stir it in to make it a whiter more creamy texture. Super good.

Hi Jess, I have followed your channel for a long time. I am not one to leave comments. I do like it when you share recipes. I love the (spatchcock chicken) recipe. I ended up buying a larger Lodge frying pan and the recipe book because I liked the chicken so much! It has become one of my favorites over the years. I made this white bean chicken chili tonight. Big hit here. Love it! I will be adding it to the winter recipe book. Gardening is what brought me to your channel years ago. I come from a family of gardening. I have been a gardener myself for 20 years. In saying that, I have learned a lot from you about gardening. I am still learning. Love your Channel and watching you, Miah, and the kids grow. We love white chicken chili; especially when a cold Maine winter keeps us inside. Occasionally I will add a couple Tablespoons of Masa (or cornmeal) to a cup of whole milk and add that to the chili, cooking an extra 10 minutes until the cornmeal mixture thickens the chili. Thanks for sharing your recipe!

I add 2 TBLA masa to one cup whole milk. Add that to the chili, cooking an extra 10 minutes until the cornmeal mixture thickens the chili. @@tamara4557

I grew great northern beans this year, for the the first time. I had 40 plants. I’ve got enough for a year. I’ll try pinto beans this year. I’ve never had white chicken chili but you’ve inspired me!

I like to add a creamy queso dip towards the end. It thickens it up and adds a wonderful creamy flavor. We serve with rice, extra cheese and avocado if we can find a ripe one in Maine! I also find venting the crockpot lid, leaving an inch or so uncovered can help with the crockpot’s “juiciness”, it is all steamy with that cover on, making more liquid as it cooks. Yum.

I learned from Acre Homestead to take some of my garlic harvest and chop it in blender and make "hockey pucks" small cookie scoop size on a baking sheet - freeze and bag up. Instant garlic - no chopping. Love it. Can do ginger too. I freeze chopped onion too. Makes meal prep a lot quicker.

So excited about this one! At the start of the season, I made a list of soups I wanted to learn to make from scratch and this was one of the few I haven't gotten to yet. Now I don't have to go searching out a reliable recipe. Good ol' Jess has got my back! 😁

Thank you for showing us you cooking dinner. This is exactly the kind of video I need. I work full time away from home on top of trying to homestead. I appreciate the "get it on the table " recipes! Incidentally, we had navy beans and cornbread for dinner last night (that I cooked the night before to have ready when we got home) and I told the hubby that I wanted to try making a white chicken chili so this recipe was perfect timing!

We made a chili with sweet potato in it. It was so good! The sweet potato complemented the savory meat and beans, and I would absolutely recommend that you make some, Jess. I love your sendoff. We came across a Cuban black bean recipe a couple of decades ago that used sweet potato, cinnamon, cumin, garlic, onion and oregano-loved it! Then we came across a pinto bean recipe that used carrots and loved it as well. The orange root veggies sweetness really make a difference.

Just wanted to say thank you for showing your "real people live here" kitchen in your background. I appreciate that so much! I have just realized at 48 years old that I am ADD &.a spotless kitchen is not going to be possible - so I'm just embracing the lived-in feel as much as I can.

Jess, I’ve been a fan of your gardening content for years. You mentioned one attraction of a home guarden being the items you can’t find in any store. I agree, but that’s all I really know how to cook with! What I’ve been wanting is a cooking channel that utilizes some of those ingredients and I am really hoping this new cooking channel can fill some of that gap.

I make cheesy cornmeal mush and top it with the soup. It makes a thick delicious broth.

When I make chili, I often put some of the canned beans into a food processor to make a paste, then I mix that into the chili. It helps thicken it and is a sneaky way for people who don't like the texture of beans to still eat beans

I always have chopped onions, garlic and bell peppers in the freezer as one of my ways to preserve and specifically for fast dishes like this.

I do this with dry beans, frozen chicken and throw it in the instant pot and it's delicious. Start to finish takes less than an hour. A great, easy, fast meal.

When my soup is too "soupy" (thin), I stir in a can of refried beans. That thickens it up and adds depth. You can also use dried potato flakes. I make a version of chicken chili similar to yours with white beans, but I now use the seasoning formula from Ina Garten's version: equal parts chili powder and cumin and double the amount she recommends. That makes a. big difference. I also add in 2 chopped sweet bell peppers. Alas, Ina Garten's version has bell peppers and no beans. "All of the above" is my favorite multiple choice option.

Another Texan here :) We make chili with chili beans, hamburger meat, tomato sauce and spices. We also mix it with shredded cheese and white rice when we eat it.

I prefer to use dried beans in mine. I put mine on in the morning before work. I think I found the recipe in a newspaper article many years ago. I love to serve it with Jalapeno cornbread muffins.

I make white chicken chili for myself, I have a husband who thinks pepper is spicy, so I make it in smaller quantities and then freeze the extra in portion sizes so I can take them to work with me. I work outside the home, so I so tend to make a lot of slow cooker meals throughout the week. I do prefer to cook fresh but to be sure that we are not going for convenance foods I make sure that dinner is planned and ready to go when I get home or that it is something I can do super easy when I get home. So glad that you are talking about good enough is good enough, sometimes we do not have the energy or the bandwidth to do more and we have to look at the fact that our families are feed and eating healthy food, we have so much on our plates, we do not need to needlessly add more.

I used to cook a white bean soup / stew when my girls were little. I would start with dry White beans. I would cook them until they were starting to get soft and I always put garlic and onions and a few seasonings in then the last 30 minutes or so I would put chicken thighs on top and cover and let it cook until it was all done. In the end I would also add butter and any other seasoning that I felt it needed to taste. I never got any complaints.

I'm still vegan but I'm interested in making this recipe. I think I'll add carrots for color and nutrients. I'm also going to marinade some soy curls and add them into the chili at the end. They look and feel like chicken pieces and I think they add some protein that might be missing without the chicken. The other thought I had was to add some chopped kale or spinach. I realize that it's way off the original "White Chili" recipe but I love to experiment. Thanks for the ideas!

I made Navy beans in Chicken with broth, whey and Turnips, garlic and pepper without all the other spices and it was delicious. I never would have thought about it without your video. Thanks!

I use cream in ours when it is finished. I have a friend who puts a jar of salsa in hers while it is cooking. You can use spicy or mild, depending on who is going to eat it.

Drop 8 oz of cream cheese in that pot in the beginning to take it over the top. When you take the chicken out to shred it, use a big whisk to get it smoothly incorporated into your bean/broth mixture. SO good.

I have never had white chili before! Yep its true, 64 years old and never had it. But this looks so good, minus the cilantro, that I just have to give it a try. Most of us in the house can not eat regular chili anymore so I just might have to try this one out! Thanks for taking the time to show us.

You know my life. I made chicken chili Friday. We put cream cheese in ours. I might leave that out next time and add the lime and cilantro. That sounds amazing.

I like making my white chili with rice (along with the white beans), sour cream and green enchilada sauce. Garnish with shredded pepper jack cheese and/or corn chips, maybe even serve white maize tamales or cornbread on the side! This can also be cooked with pork.

Absolutely love your channel and your view. Having the pressure to the best or ‘perfect’ all the time can be hard and sometimes it’s okay to say good is good enough (it’s something I’m trying to work a lot on myself). I’m planning to grow fruit in the veg in the garden this year and already planted a load of garlic in the garden in autumn. A tip I have found is to mince and freeze the garlic in little pucks so that it’s convenient and on hand when needed.

I make this often. My family is as large as yours, we're a family of 4, but I cook a double batch so I can freeze some. My philosophy is cook once and eat twice. Homemade frozen meals are another great option for nights when you don't want cereal for dinner😊

heres a tip for crockpot cooking cover the crockpot with a towel it will act like a oven and keep the heat in more i just learned that about a year ago

I do that in the wintertime too. My kitchen is drafty and it takes way longer to get the crockpot up to temp if you don’t make him a “crockpot cozy” out of a bath towel!

Made it for dinner tonight, and we love it. We have never tried a white chicken chili recipe before. Substituted the can of green chilis for home canned rotel style tomatoes and peppers instead. Finished as more of a Tex Mex soup but still so good.

You can also pre-chop onion and garlic and freeze it for quick convenience use.

I love making this. I also have a couple of quarts of home canned. I always put salsa verde in mine, or at least some tomatilla's. Oh, I am also a Texan and always put in beans, and the people in Texas I know do put beans in chili. I believe the option is global.

My Walmart started carrying 505 fire roasted hatch chilies (in a jar not in a can) and I can confirm they are superior. I meal prep with them, use them in place of salsa in breakfast tacos. My next goal is a pork stew with them. Amazing!

I grew two Anaheim chili peppers this summer and I had peppers up to my eyeballs and beyond. They are VERY productive. I am in south-central Texas and it was HOT HOT HOT last summer for a LONG time and those peppers didn’t miss a beat (even though my jalapeños and bell peppers perished). Just FYI, you will not need a whole entire row of those New Mexico style Anaheim peppers.

Thank you, I now have a new recipe to add to my rotation! I modified my version so I could make it in an instant pot with dry beans and it turned out great! I also added a jar of my canned tomatillos which was a great addition. (Especially since we had a bumper crop last year of them). Thank you for the inspiration!

Have you ever shredded chicken, using a stand mixer? I saw someone do it once and I've never gone back! It's suuuper quick and doesn't tire out your hands!

I love the good, better, best thought! Giving yourself grace to allow things to develop along the way is a great skill. I didn't think I had it in me to cook by heart, but after some grace and some practice I am surprising myself with good food without a printed recipe. ❤

This is one of the meals I go to when I have a busy day and don't want to rush and cook. Prep everything that has to be diced the night ahead and then put it in the crockpot with teh seasoning in the morning. I always drain them, but I'm going to try cooking in the liquid as I always blend so much of it or it is so soupy (still good though). I use canned chopped jalapeno, just a few slices but I also add with the seasoning some habanero mix powder with cumin and some soked paprika. And we have to have corn in it. If I have time I serve it with sweet cornbread and some avocado, I'm going to try serving it with tortilla chips sometimes. Love the pattern on your crockpot!

I made this as beans is a abundance in the house for dried stock.. It snowed here in upstate NY (Jan 17, 2024) week very cold temps here and an icy road, as it’s a private rd no salting and I’m stuck inside and not out and beans I always have in stock, dried and canned, and have all these ingredients but only I have no tortilla chips but I will be making “cheesy biscuits” with it. Can’t wait to try it. Crock pot is the way to 😅go so I can sew and do some chores.👍 Thank You for the recipe and sharing

I used to love white chicken chili but I used the McCormik seating package. Since we started ketovore eating 2 years ago, that is no longer an option so thank you for this clean recipe.I loved the white shoepeg corn in it but we no longer eat it so this will be in the wha's for dinner files. Retirement allows me to slow simmer on the stove so that will also thicken it up since we use the organic canned white beans. Thanks! BTW, grilled chicken really does kick up the flavor when I made the packaged chili so I know it will really do it for this. Since it is slow cooked you only need to grill the chicken half-way and it will finish cooking on the stove.

Yes!! I've made this for years, but with green chilies and no cilantro or lime. I'll try it that way now! Absolutely a go-to for easy healthy dinner. I love that you show how to roll with it and "just make dinner, not a cooking show" and allowing us to see your process!

Yes, grow the hatches if you haven't yet! You would be great it! I started growing them even in my shorter season mountain climate here in Northern California, and now I grow them every year. I didn't have the stamina to roast/pressure can any last year, and deeply lament that decision 🤣😥 We make a lot of Pork Verde/Carnitas, and I love them for that. But I did make a roasted hatch salsa and freeze dried it -- and will now do that every season along with the diced canned chiles. Definitely making this chili with some of our homegrown white beans! Thank you, can't wait to try 🤗

I made this the other day and it was fantastic! We did add more jalapeño since we like spice and we don’t have kids in the house. I loved this recipe. So good! My husband said it’s his new favorite chili ❤

Just so you know, if you have a stand mixer, particularly a heavy one like a kitchen aid, you can put the paddle attachment in and shred your chicken in the mixer!

I make green chicken chili, usually made with pork but husband doesn't eat pork, with green tomatoes fresh or canned from the garden with pretty much the same spices. Been known to add leeks at times or even capers. Beans are a great protein and fairly cheap so always a good filler in recipes.

Yum, yum & yum! My slow-cooker is making a pot roast with potatoes and carrots for me right now! My son is NOT a chili fan, so when I make a batch, I am able to can the "left overs" in pint jars unless I had a wild hair and added something that isn't safe for pressure canning, then I will pop single serving portions in the freezer.

I make white chicken chili all the time. I add Verde salsa to it. I don't know why but you inspired me to make a huge batch and then freeze drying it. I normally freeze dry my leftover soups.
