My favorite recipe for white chocolate ganache drip cakes that turns out perfect every time. Learn how to make it extra white, drip cakes with it, and troubleshoot if things go south. Read the original blog post I wrote about this recipe here: sugarandsparrow.com/white-cho...
White Chocolate Ganache:
Ingredients
1 Cup (190g) white chocolate chips or bar, chopped into bits
1/3 Cup (80ml) heavy whipping cream
Up to 1/2 tsp food color gel or whitening gel (optional)
Instructions
1. Chop the white chocolate chips or bar as finely as you can and place it into a heat resistant bowl (glass or metal).
2. In a saucepan over medium-high heat, warm the heavy whipping cream until it just starts to simmer, whisking constantly. I always look for small bubbles forming around the edge and a soft boil starting in the middle. When it reaches this stage, pour the cream over the white chocolate.
3. Whisk together until the ganache is uniform in consistency and there are no bits of chocolate left on your whisk. It can help to hold the bowl over the residual heat from the burner (once it's turned off) if you're having a hard time whisking everything together.
4. Whiten or color the ganache (optional), then cool ganache at room temperature for anywhere from 5-20 minutes (depending on your kitchen environment), or until the ganache itself is slightly above room temperature.
Recipe Notes:
Make Ahead Tips: this ganache can be made ahead and stored in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, microwave it in 10 second increments, stirring after every interval until your ganache is room temperature and uniform in consistency.

I love you recipes I use your cream icing recipe and everyone loves it! I have a cake to do this week and first time doing the white chocolate drip! Thank you so much for the very informative tutorial on making this ganache. Just did this today to add a bit of twist to my fruit cake. Using your ratio is 3:1, I combined 247g of Côte-d'Or white chocolate in bars and 80ml of heavy whipping cream in a glass, microwave for every 20 seconds until the heavy cream is just simmering. Then just added a few drops of vanilla and a pinch of salt to the melted ganache. The consistency was spot on! As you mentioned, it depends on the chocolate you use. note: I added an extra 7g of chocolate to make the ganache thicker. Thank you again Sugar and Sparrow. Blessings to you.

Awesome! I see you use a gel coloring for the drip. I was under the impression that an oil-based color with chocolate so it wouldn’t seize. Any advice?

use oil based food coloring just to be safe! gel food coloring in chocolate will make is seize (like you said)

Hi, can I add in the powder sugar to whitening the Ganache ? What other cream or liquids can I use if I couldn't find double cream in my country ? Thank you .

Hi there! Powdered sugar won't whiten the ganache, it will only thicken it. To whiten the ganache you'll need to use icing whitener or titanium dioxide powder. I've never tried any substitutes for the double cream, so I'm not sure what to recommend. I know people have made ganache with coconut milk and other liquids, but I'm not sure if the amount changes. A quick google search should help you determine the best substitute though!

Hi Grace! This recipe makes enough to drip two 8-inch cakes. It yields about 1 cup.

You did the right thing adding more cream to thin it out! It’s interesting that the ganache turned out too thick initially though - most of the time it’s the opposite. Did you make it according to the directions in the video (pour the simmering cream over the finely chopped white chocolate and use the residual heat from the burner to assist in combining if necessary)?

@@christinegriffiths936 I would either add more cream or use less chocolate initially next time then. You can totally tweak the ratio to whatever works best for you! This ratio is just what works best for me, probably because I always add color gel or whitener (which thins out the ganache)

your recipe mentions 1 to 3 chocolate to cream...I think there is a typo because 1/3 of 190g is 63 g not 80g.

It’s 80ml of heavy whipping cream, not 80g. This 3:1 ratio is by volume, not by weight. It’s just easier to measure the chocolate by weight and the cream by volume to get an accurate measurement for this recipe

To halve this recipe use 40gms cream and 95gms chocolate. This is why I don't like cup measurements. Grams can easily be halved. Remember,liquid and solids are different weights in cup measurements if you think my measurements are off..they are correct.
