There are some pocket knives that might not work and a bunch that are going to make the project much more difficult. Any knife can be sharpened well, but blade thickness, length and shape also affect it's usability. If you're wondering about a pocket knife that you already have, I suggest just trying it out.

14 hours give or take. This one is significantly more complex than most of my projects that usually take somewhere between 3 and 8 hours.

i have difficulty cutting the wood. i tried a swiss knive, whittling knives and even dremel tools but all of them are so ineffective at cutting the wood that i cant do this hobby. what am i doing wrong?

Could be the wood that you're using. Have you tried basswood or aspen? You can also try soaking a piece of wood in water for a day or so to make it easier to carve.
