I'm not sure what your feelings are about mayo but I have made a similar thing with mayo as the base then mixed spices into the mayo and coat the cauliflower! Super good! I use a similar sauce mix to pour over and bake salmon!

Try steaming the Cauliflower first, pat it dry then coat it in the sauce. Or just bake it partway first before covering it in the sauce. It also works well if you cut the cauliflower up into smaller pieces and then coat and bake, but of course you lose out on the presentation factor. It might also work to cook at a lower temp for a longer time or even cover it with foil to cook for the first 2/3 of the time then uncover for the remaining time to let it brown nicely while it finishes cooking!
