Do you guys eat the head too (we do!) or does it go to the cat? There is even more flavor in cilantro roots than in the stems; too bad they cuts the roots off before the cilantro gets to the store in the US. In Asia, they sell cilantro with the roots. Of course, they would be full of grit and dirt, but if you make the effort to clean thoroughly, you get some mind-blowing flavor from the cilantro roots.

I realized I added more stock than it’s needed. When I made last time, I added potatoes, which helped to thicken. You may thicken with corn starch.
