Wow, Ling, this is an easy one pot meal, can't wait to try it ! Please make more hot pot , I need to get ready for Chinese new year...hahaha.... Only one thing, if I just add 1 teaspoon of chill bean sauce, 1 dried chilli , and reduce the Sichuan peppercorn by half, will it still turn out to be very spicy ? Hi Ling, A spicy fish stew with rock sugar (or any sweetener for that matter) is a new one for me! This is even more so since you haven't added anything acidic (vinegar / lime juice / yogurt / sour cream / tomato paste). In our cuisine, we do have some fish recipes that call for a tiny bit of sugar but those also have something sour like tomato puree or yogurt. I want to share something interesting about rock sugar. My late grandma insisted on using rock sugar while making a traditional dessert with milk and rice. Normal sugar works, but she held that the final product is creamier if you use rock sugar. And she was right! I never figured out the reason behind this because rock sugar, grain sugar, powdered sugar all have the same chemical composition. Maybe the trace impurities that are added in the manufacturing process make a difference.
