In my new hometown, Loboc, Bohol, Philippines, it was fiesta time, and I wanted to share the festivities at our aquaponic farm. When I asked the workers what they wanted to eat, they surprised me with a whole goat! 🐐
We went all out, using every part of the goat, from head to toe, even the intestines! It was an eye-opening experience to see how Filipinos prepare goat, and let me tell you, it was absolutely delicious! We even used the goat head to make a mouthwatering sinigang soup!

I lived in rural Hawaii in the 90's. My Filipino neighbors would butcher a goat now and then, and share with their haole neighbor (me). I don't know what style dish it was, just remember it as delicious!
