Chefs can’t cut meat like real meat cutters and they seem to have their own names for different cuts.

It's a class for chef's, so it's likely a very cheap 2nd-class quarter since it's not for consumption. Pet-food grade; utility-grade?

Someone on KZbin stated that fat was more expensive in feed to produce than muscle. It takes so much more feed to make fat. That rancher lost his ass!

He cuts away a lot of the higher-priced meat and ends up with a lot of lower-priced stew and ground meat!!!

no. sirloin tip is off the hind leg above the knee.. skirt is skirt.. hes calling the skirt steak sirloin tip... idk why

He probably refers to that particular skirt steak as a "mock" skirt steak because he's a chef. Chefs prefer outside skirt steak which is between the brisket and the flank, whereas inside skirt (in the video) comes off the flank. Why he calls it sirloin tip, like I said before it's a restaurant industry thing. I've seen videos where chefs that are referring to flap meat call it sirloin tip as well.

what I find disturbing is that these people here are just cool, fun to be around people. Probably great friends. I will never get to know them, laugh with them, hang out, and do fun stuff together with them, and get to spend good times with them. This is sad. This world we live in is so BIG, and there are so many good people like these butchers here. Its impossible to get to know them given how many good folks there are. We do not have the time, and means to get to know everyone, So next time your enjoying your Porterhouse Steak at a Texas Roadhosu, or other establishment, think of the good people around you. Brothers, and Sister

It is grain feed beef, You can tell by the way the fat is crumbling, And if it was grass feed the fat would not crumble and have a yellow tinge to it from the Beta carotene
