Whole Roasted Christmas Goose with Gravy

Goose used to be the meat of choice for the holidays until turkey came around. While they're very expensive, you can also cook a duck the same way. I go through the basic method I use for roasting a goose or a duck here and making a simple pan gravy from the drippings. I'm in Sudbury, Ontario. I can get goose and duck at my local farmer's market, from a person who raises them locally on her small acreage. Had a duck couple weeks ago (roasted), extremely reasonable, really tasty. Looking forward to trying a goose done this way.

150 mm petty knife. There's cheaper carbon steel models around 30-40 if you want to test the waters. This one is heavier and stainless steel.
