Chris Allingham, publisher of The Virtual Weber Bullet, demonstrates how to dry brine or salt a whole turkey and barbecue it using the Weber Smokey Mountain Cooker.
Note: An astute viewer noticed a discrepancy between the amount of salt used on each breast in this video (1 teaspoon) versus the amount listed in the written article (1 Tablespoon). The article is correct, the video is wrong. Use 1 Tablespoon of Diamond Crystal kosher salt per breast, 1/2 towards the front and 1/2 towards the back.
