My partner is Bolivian, they also make a dish called anticuchos- bbq’d beef hearts, seasoned with s&p and cumin over white coals. You make a peanut-based dipping sauce. Absolutely delish!

With thicker slices (1/4") does the center of the meat need to turn brown like the outside while marinating? Mine is still pink after almost 2 days marinating.
