And of course, keep up the amazing videos that focus more on the cooking process. Um take out burritos and tacos are never as good as homemade. I frequently HAVE to make my own tacos if I want them to be good. Have taco and burrito places never heard of OLVIES!!!!! that is a Staple in any burrito or taco.

It's funny because I made burritos at a small restaurant. I'd by the same exact ingredients, use the same cooking method, and they'd still come out better when I made them at work versus at home. I'd like to think there's a little restaurant magic, or maybe stress makes a burrito taste better.

how would you season the meat? I hate using those prepackaged taco seasonings, none of them taste good to me and they don’t taste anything like a burrito you would get from a real Mexican restaurant.

@@sahd0wpersonally I’ve found just using regular store bought individual spices and mixing them is 10x better than the packets. Not only can you chose what the blend is, but the packets always seem to have like no flavor. Personally for tacos I’ve landed on a mix of Salt, Pepper, Chili powder, oregano, onion powder, garlic powder, and cumin as my baseline. Be careful with Chili powder as usually it is mixed with garlic powder and/or onion powder so adding those separately could be a little much. Also for the record I’m about the same shade of white as toilet paper so there’s that fact for what it’s worth. I usually add hot sauce and jalapeños/habaneros fresh with the tacos so I don’t add much heat directly to the seasoning mix. Cheers!

Also, if you are a rice enjoyer: Dissolve a spoonful of tomato paste to the rice water before you cook the rice. That's how you get the orange rice they always have at Mexican places. Bonus if also dissolve some chicken bouillon in there, too.

You have to fry the rice in oil first, then add either tomato paste, tomato sauce or blended fresh tomatoes to cook the rice.

Personally, I've found that warming the tortilla over on the lowest heat setting and covering the pan with a lid helps the cheese melt, it helps the tortilla become much softer and pliable, and it helps the burrito itself become steamy.

Getting great tortillas was the tricky part, but I found a solution: ignore your supermarket and hit up your corner bodega instead, then go for the brandless bags of tortillas that the store owner clearly picked up straight from a factory. Edit: if you can't find a bodega, like a lot of people replying to this comment can't seen to, find the grungiest corner store you can. Bonus if they have boxes of detergent from fifteen years ago on the shelf.

I probably depends on where you live. Here in Phoenix, a lot of grocery stores carry high quality tortillas (my Safeway does). The fact that "Mission" brand became so dominant, is a failure of our culture. Tragic really.

I simply cannot believe that after buying 1000 foil wrapped burritos, and having dozens of leaking burritos at home, it never once occurred to me to wrap my home made burritos in foil to stop the leaking until I watched this video...

As someone who grew up in SoCal and probably ate more than his body weight in burritos in a given yea, this is all great advice. The Tortilla is such an overlooked ingredient that deserves more care and attention. And if you ignore everything else in the video: Remember the part where he said to warm your tortilla before you wrap your burrito. That alone will prevent blowouts, cracks, and generally make the texture of the tortilla better to the eat.

David Coleman The tortillas he uses are a store brand, made in the store, so they don’t have a name. In San Diego there are plenty of places to get the good tortillas and there are also imitators, so you have to know which are the bad ones. You will never see a real Mexican buying Mission Tortillas unless maybe, they’re in Mississippi and are desperate. So it depends wheee you live. Where do you live?

I hear you on the rice thing, but seriously, rice with corn mixed in, fried up with a little butter is my favorite burrito filling for homemade burritos, it dramatically stretches out how many burritos can be made in a single meal and that's important for actually feeding everybody as much as it takes for them to be full. Gonna steal that cheese trick, I always warm my tortillas but I didn't think of that.

I read the title and said "I mean...it's most likely the tortillas...." and then everything after that was on point. Winco (if you have access) sells giant restaurant style tortillas but don't reseal. People normally go overboard with the beans too, they go a long way. A lot of the flavor of burrito come from the excess fatty tortilla but most people think it gets in the way.

Made these for my school lunch and it was room temp but so delicious man. The toasted burrito but chewy from steaming was a revelation to me. Usually my tortilla is crispy cause it eat it straight away

I can't believe how many places I've been that don't even warm up the tortilla. It's so aggravating. I am thinking about doing a taco truck just cause no where is ever as good as what my dad made and he taught me before I cooked at a bunch of places. Don’t feel bad. Wrong for 50 years for me. Just last year I went for a 2 week burrito and wrap rolling school that is held in El Paso Texas. I had to go through the school twice to get the hang of it. It’s hard to teach an old dog new tricks.

@@TheBrokenEclipse the point isn't that they are unhealthy lmao. The point is the carb to protein ratio is not good. It's too many carbs for each gram of protein, and too many at once. It's both unappealed to people used to eating healthy as well as bad for your body fat composition (if you want to be fit). If you are young or have incredible genetics you can eat like that. But if you listen to your body very carefully, you'll notice it is extremely redundant

@@griffinwik Lots of butter in the pan, beat eggs with milk or cream and optionally a bit of melted butter, cook on high heat scraping/flipping regularly. Added milk really fluffs it up a lot. If you're adding any seasoning/spices, add it after the egg is cooked just before removing pan from heat. I like a bit of salt and pepper, turmeric for orangey-yellow colour, and just a touch of chili powder and cumin for warmth.

I worked at chipotle for 2 years, when I started shopping for myself I realized aldi carries the same brand onions, avocados, jalapeños, limes, salt, tortillas, pretty much everything except the meats aldi carries the same brand, when I quit I started making it at home, tastes the exact same.

That is the secret. Chipotle will like other big box brands source product from local (like near the restraunt, not locavore local) distributors per region. They will shop different distros and have them provide a sample of what a restraunt would be ordering and then have their road crew using a portable restaurant cook items with those products and do a tasting to see if it produces the end product to their standards. Thats right all that awesome smugifying "clean" chipotle food or at least a lot of it is the exact same thing that you can get at any other similar place that sells similar food. And its only different because of the process they put it through and because they told you its different and you beleived it. Especially when it comes to vegetables. Vegetables do not travel well. They have expecially if they have been processed at all meaning chopped or sliced or cut, a rapidly vanishing shelf life. It takes a lot of logistics and money to build a distribution system to get most fresh vegetables from farm to store while they are still good. Unless you are mcdonalds or Walmart, you are fighting loosing battle when it comes to moving things like tomatoes and lettuce and cilantro yourself it almost always makes more sense to source from existing distros to get those things the last mile to your individual restraunts. Thats why people found that aldi has the same lettuce and bells and onions as chipotle. As big as they are, they arent mcdonalds. Mcdonalds gets two or three trucks a week, at least when i worked there and nearly everything came on the truck. But they literally use like lettuce and tomatoes and thats it. Pickels travel well, onions do too. You just need a dry cool part of the truck for those rather than the cold or frozen side. Same with tomatoes and mcdonalds has distro centers like wal mart and large grocery stores. Small grocery stores like aldi will have dry distros with some small cold areas for dairy and meat, because last time i looked their milk came from private lable brands that no one else carries. But they will order produce from local distros as they need it. Since produce is one of those things that can go fast either through sales or spoilage it makes sense because you can more easily make a hotshot order from a distro in the same city as you than you can from a company distro thats perhaps in another state. Large grocery stores (aldi is actually a large company but their individual units are small and not super high volume because of that, aldi owns trader joes, thats how big they are) So yeah chipotle uses the same lettuce as aldi does. Or onions. Its not really super special chipotle lettuce.

As long as you moderate and keep your saturated fat to DV youre good. Most of the studies from the 60s/70s about fat consumption were based on bogus science. The Mexican markets have a tortilleria in the store, just follow your nose to the back. No “brand” just buy from their counter.
