Why are some professors more lenient than other professors?

I had a great Comp sci prof that would increase the difficulty on a few test answers on the top performers to push us. They were questions that could be answered multiple ways and at first it was annoying but then I appreciated it. It was in the 300 level courses in our junior and senior years.

I had an art professor that assigned more work than my other 3 classes combined. It was an art class, for non-art majors. Ridiculous.

But you cant compare the effort to do a painting in 3 hours, or to read a book for 3 hours. Or you can consider sitting 8 hours on an empty sheet of paper to start a new novel as work ? Inspiration is not measurable in time.
