When it comes to Chicago-style Deep Dish Pizza, there are many questions. Why is Chicago Pizza upside down? Why is Chicago Pizza the best? What's the story of Chicago Pizza?
Well, we had a look into the topic. We found that Chicago's iconic deep-dish pizza is traced back to the early 20th century, emerging from the vibrant culinary scene of the Windy City. While its inception is debated, it is commonly credited to Pizzeria Uno, which opened in 1943. Ike Sewell and Ric Riccardo, the founders of Pizzeria Uno, sought to create a distinctly different pizza from the traditional thin-crust New York style. Their creation featured a deep, buttery crust that hugged the edges of a high-walled pan, generously layered with cheese, toppings, and a robust tomato sauce, creating a hearty, almost pie-like dish. Over the years, this indulgent creation gained immense popularity, becoming an emblem of Chicago's culinary identity and spreading its influence across the globe, delighting pizza lovers with its unique texture and flavor profile. Today, deep-dish pizza stands as a beloved symbol of Chicago's rich culinary heritage, celebrated by locals and sought after by visitors craving a taste of this deep-dish delight.

Two years ago, I brought my then-girlfriend (now fiancé!) to Chicago for her first trip to America from Holland. I took her to Lou Malnati's for deep dish. I had sent her a screenshot of Lou's deep dish so she knew what I was talking about, and she responded, "Oh, we have lasagna here too"...!! We still laugh about that, but when we went to Lou's, she absolutely fell in love with the best deep dish pizza in Chicago! Thanks for the history lesson, Ryan...!!!!!

What a lot of people don't know about chicago(land) is that there's three different endemic types of pizza here. There's the iconic and delicious deep dish, which you spoke about, stuffed, which is similar but it's more pie-like since it the layers are dough-cheese-topping-dough-sauce instead of dough-cheese-topping-sauce, and then there's Tavern style, which is a thinner crust and the style you'll get if you go to a local pizzeria and just order a Pizza with no extra qualifiers. Tavern style is pretty standard as far as pizza goes, though the crust is a bit crispier and thicker than new york style and the pizza is cut into squares instead of triangular slices, which makes it a bit easier to share in my experience, though there's always a couple pieces that are mostly crust and a few that are no crust and therefore messier to eat.

Sigh. People outside Chicago blow pan pizza out of proportion. I get it. You guys are fixated on that because it's the most different from what you eat. But at most, I eat pan pizza maybe once a year. Usually if I'm entertaining someone from out of town. What we Chicagoans eat regularly is now being called "tavern pizza." I disagree with that. I think it should just be called "Chicago pizza."

Largely crappola....... The first pizzas in Chicago were served in TAVERNS after world war 2. They were not deep dish. I never saw deep dish here before the late 1970’s. It may have existed, but certainly wasn’t well known. It was predominantly (if not entirely) thin crust before that time.
