I used to hate cinnamon, the smell made me gag. Then one day i woke up and MAGIC it wasn't so repulsive anymore and i started enjoying dishes with it. First it was sweets, then savory dishes and teas. I'm glad i can appreciate it now, it's such a comforting flavor. Warm and cozy.

I put a cinnamon stick in to simmer with my lamb soup and stew, even when all the other spices and ingredients are traditionally "Western" (i.e. garlic, onion, carrots, potatoes, etc.). It is also a common ingredient in Moroccan savoury dishes. It is transformative.

Fun fact: Cinnamon and Cassia were known in European medieval cooking (including savoury dishes) from at least the 12th century on, likely even sooner. Usage varied after the Renaissance but you can still find it in many traditional savoury dishes especially of southern Europe.

I use cinnamon in several savory and sweet recipes. I also use it in my "fire cider" for "medicinal" uses. And I was so excited to see you also put it in your oatmeal as I do... but, have you ever tried adding a spoon or two of peanut butter in your breakfast oatmeal with your fruit and cinnamon?

Cinnamon is a great all purpose spice. I keep powdered ceylon for very delicate applications like homemade speculoos and cassia sticks for stuff like beef stew (a mainstay in mom's beef stew recipe).

I had some Moroccan food (Chicken Bastilla) years ago, that was my first experience with cinnamon as a savory component. Amazing! Then I recently got some Vietnamese cinnamon from King Arthur Flour and WHOA. There really is a difference between cinnamons. Thanks for this video - I hope more people try putting "unconventional" (to them) spices in dishes from it.

my parents (theyre from kerala in south india) often cook rice with a stick of cinnamon in it just like june showed in the video and its really delicious. they usually make it like that when cooking biryani but a cinnamon stick can spruce up even plain white rice and make it feel super fancy and restaurant quality lol

JUNE!!!!! YAY!! I have missed you so much. I love cinnamon. I can only have ground or stick cinnamon but cinnamon oil i can't. So, anything like gum or candy or actual oil flavored with hot cinnamon oil will actually put blisters in my mouth. Is that the same as what you were using?

Something about cinnamon triggers my gag reflex. I can handle it okay in small doses like Pillsbury cinnamon rolls where it get drowned out by sugar, otherwise no. I even have to hold my breath when entering craft stores during the holiday season because they always blast you with those cinnamon scents as you walk in the door. But I wonder if I tried true cinnamon (I'm assuming I've only had cassia up until now) if it would be any different.
