If I went into a pub and ordered a pint I would expect a full pint of beer. Anything more than a finger of foam on top and it will be sent back. We want beer not air

@@rob86trott I mean, then order one that way? And i hate to break it to you, but air is a pretty damn important part of cooking/food in general. You wouldnt have bread or ice cream without air, let alone various other desserts/sweets.

fucging LOL'd as a mexican i didn't like foam on beer at all, but now since i got started on the noble art of brewing my own beer, i've found out that foam is important to preserve the flavors without oxidation. Having said that, a glass full of foam is just bollocks, LMAO.

As a Belgian this is so odd to me. We're taught that a pils beer should have "2 fingers" of foam. Of course we use a different kind of glass as well which is more narrow. If you served a "mliko" here, you would get in a fight :)

yeah the style you are thought is the most common here "hladinka" the other types have to be ordered, if you order normal beer not specifying a special type and the bartender pours all foam, you are eligible to punch him in the face

same in bavaria, if you serve a "milk" its going to be the last beer you ever drank. sometimes it happens that people who cant properly pour a beer get a lot of foam then everyone just makes fun of them but i have never heard of anyone legit willingly drinking "milk" beer

When you buy beer in czech pub you always get hladinka what is normal beer. They will not understand at all if you say them hladinka or another styles of taping. Maybe they will only want to know what brand of beer do you want.

In Germany, the glasses have a line. Up to that line there has to be beer, above that line foam. Order must be preserved.

It's the same in Czech. The line is 0.5l, but it's in the glasses, not a mug. But it was still mostly beer if in a mug. I never saw this type of pour with just foam, and I lived there a year and a half.

that is a complete BS. after foam is down you will get to that line. I can get you full glass with no foam but it will be your first and last one - gas will take all the space

I’ve been drinking beer here in Europe for almost 2 decades and I’ve never seen so much foam unless the person on the tap didn’t know what they were doing. In Austria, we have foam, but it needs to rise above the glass mostly. We call that a crown.

Believe it or not you can really order that in Prag/Czech. It's on the menu. It's not "European" its eastern European or maybe only Czech. You can see tourist and locals alike drinking it there.

As a german, here the beer also ALWAYS has foam, if I think about beer not having foam I think of it as if it was tapped hours ago and forgotten. Most of the time, you have around 25 %-30 % foam in the glass here

Quick answer to the title: They don't. Or more exactly, the foam head size depends on the type of beer _and_ the local custom and habits (Because you know, Europe is not a country... there's a lot cultural differences between countries).

Exactly. I know Chech are like the biggest beer drinkers in the world so I am not surprised they would have some unique beer drinking habits, but I live in Hungary (we also drink a lot of beer) and I never heard a person say "lot of foam = good". Quite the opposite, if we order a mug (0.5 liters) of beer we expect it to contain exactly 0.5 liters of liquid beer and then the rest of 1-2 cm-s until the rim filled with foam. Anything more and the customers would feel cheated out of their money. Ofc, serving beer without any foam is also considered a bad habit, as it takes away from the taste. What can I say, beer tapping is one serious business.

@@Hungabrigoo i think a general rule of thumb would be 1-2 cm of foam for any tapped beer in most European countries.. In the Netherlands this is the same, unless you order a double or triple malted beer in a bottle. But you will get a special glass with that, and are supposed to pour it yourself in most cases.

People talking about not getting the amount of beer they ordered because of the foam. You have to realise that good beer over here costs 1-3 euros depending on the city and the establishment you are in. With a price like that, we can afford to have slightly less beer in any given glass (also the glasses are ofter bigger than 0,5 so you get the amount ordered plus the foam)

If you notice, he has side pull faucets. This style faucet allows one to pour as much or as little foam as they want. Regular faucets (front sealing or rear sealing) are made differently.

Funny about the “dirty” beer. My dad grew up in a Czech neighborhood in Chicago in the 1900s (didn’t hear any English until he went to school when he was five). He would be sent down to the local pub with a wooden pail to get beer. He said his dad would rub butter along the rim in order to cut down on the foam and increase the beer, which would piss off the bartender.

@@damiandiskanec9958 Pilsener and a mug full of foam are two vastly seperated things. Using a tap correctly gives you a steady crown over the rim and fluid beer right to the mark.

We stopped in to Cerveny Jelen a couple of days ago for a beer or two, and tonight we had a table booked for steak! OH MY GOD that was good food and drink, literally nothing else like it! As a person from Czech i would like to point out that so called ''MILK'' is not typical way we consume beer , beer needs a foam head around 1 inch or 3 cm we would not be beer world largest consumers per capita if we would drink foam. You need to drink the beer before the (1 inch ) of foam goes away , beer without a foam head = stale beer = crime

The milk beer might be a good thing for someone who has low alcohol tolerance but still wants to go out drinking with friends since there's less beer overall in the glass (plus I'm sure its amazing for their margins to convince tourists that its a special way to get a beer)

I understand the idea that the foam insulates the beer... But how slow do you have to be drinking the beer for it to be noticeable or matter? I've drank a beer that has been sitting for like an hour and not noticed it go stale at all, and pretty much any time I'm at a pub or bar my beer will be gone in 5-10 mins.

In the Czech version, they added that the "šnyt" type (4/5 is foam, the rest being beer fluid) was due to breweries treating their pubs (to which they distributed) well, and so they gave every 11th barrel for free. Since those pubs treated their customers the same way, tapsters gave those for free as the last beer when the customers were already done and heading home.

In Germany you can order Schnitt as well. Differently written but same pronounciation and of course about the same looks in the glass. Czech beer is better than good. Ahoi.

Went here today and ordered two of each of the beers featured in this video. Also, asked for one of their pint glasses and they offered it for just 100czk; the best souvenir I could ask for! In all, 8 pints, a mug and a rounded-up tip came to 600chz (£22). Thoroughly happy given I come from England where beer in far less fancy pubs costs four-times more. You must visit!

For those shaming the foam head (Irish etc): The glasses are made bigger on purpose. You always get your pint and the foam is there to protect it, you are not robbed

Foam is more than 90% air. This glass isn't even a half pint of beer. Or he have really tiny hands.

@@judaswasametalhead It's a pint, don't worry. The foam is less than 90 percent air. If you let it sit and let the foam disappear (or fall, as you would say in czech) it will come to about a pint. It least from a skilled bartender. But people here can usually tell if they've been served a smaller amout than they should have been, it's also a point of pride for the bartender to be able to tap a beer right.

@@mach2223 My biggest fear with mliko was you pay the same price for a full glass of foam than for a full glass of beer. Which is not the case. But why would you order a glass full of foam ? The answers I found : - you drink it faster than a regular pint - it is lighter than regular beer in taste and alcool. - it's creamy Even if I disagree with all these answers, let's just say it's cultural. Still, the title of this video is a lie.

@@judaswasametalhead Listen up, nobody seriously drinks mlíko for real, it's really pretty much just a gimmick. When you go to a pub, you just ask for a beer, and you get a pint (1/2 liter) glass with a big foam head. That's just how it is, don't over-analyse this with calculating foam air content and trying to say that we are all getting systematically scammed by our bartenders, we're not.

The Czech Republic has changed so much from when I first visited in 1991. I’ve lived in Germany and the UK…never saw a beer that was nearly all foam. I think blood would be spilled if a beer like that was served at Oktoberfest.

You must realize that you pay accordingly (=less) for Mlíko, and that it is just a different style. I still think it is better to get beer with foam only (because the foam is beer) than getting a beer with no foam at all.

Snyt actually comes from the German word "Schnitt" which means "cut". It was traditionally cheaper and often drunken by people before they go or if they don't have time, because it can be filled very quickly and contains about half the amount of beer a full glass has in. So, in Germany, if you order a Schnitt, you should pay about half the price of a beer. But I think you can only do this nowadays in traditional beer pubs, mostly in Bavaria. Btw, if Mliko costs as much as normal beer, it is a rip-off. The content of actual beer is really low. It's mostly air!

AFAIK both Šnyt and Mlíko cost the same as a small beer. Which is probably fair, if you waited for both to settle down, they would probably amount to around 0.3 l

tbf when I went to Prague, my friends and I were served beer similar to the Hladinka with the head being almost half the pint, genuinely thought they were taking the piss because we were foreigners but didnt complain because it was probably the best beer(s) I've ever had and thought that maybe the head had something to do with it. Glad this video has clarified this.

Every glass in which you can order anything in a restaurant has to have a mark, which shows you if it's filled properly. This exact glass has that mark 2,5 cm (1in) below the rim.

Beer in Europe has a big foam head... Britain, Ireland: preferably no foam at all. France, Italy, etc: very little Belgium and Netherlands: 2 fingers (held horizontally) of foam Germany: if the foam doesn't build up on top of the glass it is no good. So basically the title should be along the lines of "why is beer served in some countries with a big foam head"

A few years ago, I had the pleasure of visiting Brno and I found that the beer was more affordable than mineral water or Cola. I'm not one to focus on quantity, but rather the taste and texture of the beer. I quite enjoy a good amount of foam on my beer, and I trust the expertise of my Czech friends on this matter. I had the exact same experience my whole drinking life in England. A hot day and lots of hard work, and the beer just doesn't hit the spot when you pay five quid for a pint of warm vinegar... So, I moved to Prague last year... It's a dream.

@@egioch i was suprised to find a pub in southampton (an hour from me on the train) that does pilsner .. but wish i knew about the signs of a dirty glass when i went...wasnt til i had drunk about a quarter of the beer that i had a sip and ended up with a bit of carrot in my mouth....only problem was i hadnt ordered food....ended up very ill as there was foodstuffs and washing detergents still in/on the glass...aint been back to that pub since!

But to be honest Prague is on the boring side of European cities , the national museum was a joke and the castles and churches that are MUST SEE are not impressive compared to many other European cities but the city great charm ; and great underrated food too I’ll be posting some videos of my trip on this yt channel if you’re interested :)

The general rule in the Netherlands is that the layer of foam needs to be exactly two fingers thick. That's how you'll get it at every bar or club with trained/practiced bartenders.

There's some truth in it though. When doing bar duty at the hockey club, I've had complaints that there wasn't enough foam in the glass. Coming from the UK that was a bit surprising to say the least!

important note to a dirty glass. Dirty can also mean with soap. beer glasses need to be washed with little to no soap, if there is still some soapy remains it will turn out like the "dirty" glass. even moreso actually, as the soap is actually made to do this. Therefore: if you are in a pub and you see the signs of a dirty glass, it may just be the owner used too much soap or didnt rinse with water enough. its not necesarily a dirty glass.

true. to reduce this problem, neutral soap bars are better than liquid detergents to clean the glass. If the soap is not entirely removed from the glass, you will get that airy foam insted of the creamy white beer head.

Actually, in the old school Czech pubs you don't need to order a beer at all.. You just need to sit down and someone will bring you a beer ^^ Took me months to be able to drink a Kofola at my pub without having to drink a beer first :D

Interestingly, in Franconia (the northern part of Bavaria, Germany) where I live, there is the same type of a small beer in a big glass, and it's called "Schnitt", pronounced in almost exactly the same way as the "Šnyt". I now wonder whether the Franconian name derived from the Czech one, or vice versa, or whether they have some other common origin. 🤔 By the way, in Franconia the "Schnitt" is typically the last beer you order, and therefore it quite often is for free!

According to Google, it is derived from the German Schnitt and also used to be free as the last beer, but today it is no longer free in the Czech Republic. In our country, you would probably pay the same as for a small beer because the size roughly corresponds to it.

In Franconia, it depends a bit on the pub (and also whether you are a regular) if you have to pay for it or not. And of course, if you order a second or even third "Schnitt", then you definitely will be charged. :-)

My wife & I just returned to USA from Praque. We had toured Portugal, Spain, Northern Italy, Austria, and Bravaria before arriving in Prague. We both agreed that the food and beer in Prague was the best! Please do a video in Kantýna restaurant near the Train station. Fabulous food and fun atmosphere!

Sounds like you haven't been to the US in a long time, or ever. Sure in the until the mid 2000s beer was pretty mediocre, but over the past 15 years the craft beer scene in the US is massive. You will find a decent beer at most bars and restaurants these days, at least in major cities. Just stay away from the bud light.

@@asortdcookie i live in the USA, in South Carolina. And yes, some craft beers are pretty interesting, but still nowhere near what CZ can offer. I was writing about beer in the average "big stores", you know, the ones that 95% of all Americans drink. Like Bud, Milwaukee, PBR, Yuengling, Coors, and such. It should be a human rights violation to force good, working people to go to look for good beer in some sort of shady establishments. But... even the PBR is a gold compared what you can purchase in Sweden.

I would argue that Řezané pivo /Cut beer is not for tourists only. They dont offer it too much because it takes time to do it correctly but if a place is not too crowded you should ask for it. Not just because of how it looks, it really tastes nice - I prefer to drink it so that both beers get mixed in my mouth, yummy. (Source: I am Slovak, we have Rezané pivo as well)

In Austria most pubs you can get a "Gemischtes", in some regions also known as "Schnitt" (pronounced exactly like the the Czech "Šnyt", but a quite different thing), which is 50% light and 50% dark beer like the "Řezaný" style (though usually not layered, but just mixed).

Im living 46 years in Prague and I haven't seen anyone ordering a milk, foam only. On the other way a beer has to have foam as without it it looks like urine. Two fingers at least

Now, you answered a life-long mystery to me. I always wondered what my dad was ordering when he told the bartender he wanted beer in a dirty glass. Because of this video and the comments below, I learned it was because he wanted less foam and more beer per pull of the tap.

@honestguide will be trying some of the beers when visiting Prague in September. looking forward to check out your many recommendations. Alas what is missing from your videos, is some spots for craft beer in Prague. There should be decent places in Prague to get the selection of many beer varieties. So will be looking for places that has beers from Nachmelena Opice brewery and alike

In Poland we dont have this, we have just beer. I think only our southern, funny talking friends (from Czech Republic) have so much types of serving beer ;)

@Ref's Channel Of course it is the standard, it's the best way of serving beer most of the time. However, a "classic" Czech pub barman should know how to serve these variants. I wouldn't expect that from that low standard of Czech pubs, where the patrons just want some beer, they don't care about nice environment, good brands, well-served beer or even clean glasses and which you still find sometimes full of smokers, despite the ban, no wonder. I wouldn't recommend those to tourists.
