This is such a fascinating topic, people think I'm crazy when I describe a Riesling as smelling of kerosene, but it's real! The compound that causes it is TDN, trimethyl dihydro naphthalene. Same with pyrazines causing aromas of capsicum (bell pepper) or polyphenols causing aromas of chocolate or cocoa

Fun story about 4-MMP (the cat-pee molecule). There are some concentrations where it actually smells like Black Currants. Also, there is some research that shows that identifying it as black currant vs. cat pee is (somewhat) based on gender.

Yup, if cat pee is there I'll smell it. I went to a tasting at a Rotary function and no guys could detect it but only 2 out of 15 women could smell it.

The best way to learn how to pick up aromas in wine is comparative tasting. Rather than drinking one wine, instead drink 2 and try to find their differences. Naturally this also works for every other food item in the world.

Great question - very similar processes are at work in coffee (and chocolate!), producing some of the same volatile compounds and some different ones.

A lot of these smells are actually faults in the wine or mead from certain issues with fermentation. Some of them mellow out with time, some of them require specific processes to get rid of, and some of them you're just stuck with.

Not to forget as well, aging in the barrel, acids either from natural sources, the barrel, or the full oxidation of alcohol react with natural alcohols to form waters, well known for their potent smells and presence in fruits

I have the same issue with beer. Just smells like something spoiled and disgusting to me. I do enjoy both wine and fermented vegetables/sourdough bread, though ...so it's not a general aversion to either alcohol or other fermentation byproducts.

Yeah, it's minty and menthol-y, with something like citrus and pine in there too. I love it, but I know some people think it smells medicinal. If you've smelled any spa products, you might recognize it!

I think that's possible, especially with certain compounds...like those that contain sulfur, which are very easy-to-recognize, both in aroma and structure.

i read that you shouldn't put wine in your refrigerator because it will "incorporate" the flavor of your food, but I ask you this, isn't a cellar where you put all kinds of foods as well as your wine? so I think I'm having a more "authentic" experience than having it's own place

I remember a clip of a TV show or a movie where two men (father and son, maybe?) were telling a woman (the mother?) about wine aromas. She had thought that they were added flavors, but they explained that it was from the winemaking process. Can anyone help me remember where this was from? EDIT: Figured it out. Please Like Me S4E4
