@@CookWellEthanfor a marginal increase in difficulty with very high return on flavor: dry toast the cumin seed and coriander seed in a pan and grind them in a mortar and pestle takes ~5 mins, no cleanup big boost in flavor presumably you know of this but left it out for simplicity but viewers should know!

Rendang is actually a Sumatran dish. Buying a packet of rendang with nasi, kankong, and lots of cabe from a Padang restaurant was my favorite local meal when I lived in West Java. It is INCREDIBLY flavorful! Glad you are giving it exposure

My mom never understood the mallard reaction, and used kitchen bouquet browning sauce in recipes...I learned from her...but now that I know, I am experimenting with getting nice brown sauces and broths by browning my meats first.

Coconut milk will get the meat (every meat) very tender. In Indonesia they use it a lot. You can even get leather tender with coconut milk sort of speak. One note, try to beat up the lemon grass...

This looks delicious! I think it is missing the key flavor profile of caramelized coconut. For my cheat rendang (no fresh coconut), I use coconut milk and dedicated coconut, cook it down until it breaks, cook it more until it starts to caramelize, then start adding beef and aromatics

World Market is a chain that has Kefir lime leaves if you have one in ur area. (same a Makrut leaves) they are dried but still strong flavor/smell

I love beef rendang! Favorite dish ever. I make it with trassi (fermented shrimp paste) and sambal (chili crisp in oil) in the aromatic paste. Especially the trassi adds a whole new dimension to the dish. Not sure if it is available in the US.

What do you think of substituting pork for stews like this? I have to watch my iron intake due to risk of heamachromatosis so i can only really have beef very occasionally.

I’m obviously not Ethan but I would think any braising cut should work for this? So pork shoulder or butt are my first thought but I don’t know how those stack up from an iron perspective so double check that before you take my word on this

A pork shoulder cut into cubes would totally work. Obviously it will taste different than beef, but pork is commonly used in other curry based dishes around the world, so I'd give it a shot!

I’ve been trawling through recipes for Rendang and this one is very easy to follow. I’m definitely going to make this but probably without the lemon grass, (perhaps just a small amount) I really don’t like the smell or taste of it. It’s why I prefer Indian curries to Thai. It looks fantastic though and I’ve already bought most of the ingredients. Great video as usual.

Proves what? That people shouldn’t make Rendang if isnt authentic? People will make whatever they want Yeah this recipe is barely rendang and I don’t like it at all, but stop gatekeeping food.
