🥂PORK JOWL WITH RUBBING SHRIMP PASTE: Season pork jowl with sesame oil, pepper and fish sauce then grill it for 8 minutes. Plate with fermented chili paste, rubbing shrimp paste, herbs, green mango & fermented shrimp.
🥂COW SMALL INTESTINE X MISO YUZU HOLLANDAISE: Season the chopped small intestine with a fermented paste mixture. Grill it for 5 minutes and stick it in the rosemary branch. Place it in a container made from a grilled onion. Top up with miso hondae foam & pepper.
🥂AUSTRALIAN OYSTER: Cut open the oyster. Put it on a bowl full of stones, add oyster cream, apple and lime on the oyster. Add some zest and top with apple foam.
🥂SHUMAI X BULOT X CULATRO: On a plate, pour balsamic mushroom sauce & place fermented shallots. Add culatro pesto & place shumai. Sprinkle some fried onions on top along with garlic foam & laksa leaf sauce.
🥂MIYAGI SCALLOP X DASHI X CHU LAI SEAWEED: Chop up scallon and soak in ponzu dressing and miso oil. Place on a plate with kaffin cream, kohlrabi, scallion, scallop dashi, Chu Lai seaweed, cilantro and dill. Garnish with flower petals and squeeze lime on top. Complete with laksa sauce & sea grapes.
🥂JAPANESE SHIITAKE X STRACCIATELLA X OLIVE OIL: Grill shimeji & shitake mushroom. Add grilled items on top of stracciatella cheese with truffle oil, coriander and pepper.
🥂VEAL SWEETBREAD X GREEN CURRY X HERB: Saute the veal sweetbread with butter, garlic and thyme. Grill the common bean for 5 minutes. On a plate, add green curry, melted butter, common bean, pepper and the veal sweet bread. Top up with coriander & chiffonade lime leaves.
🥂PATAGONIAN TOOTHFISH X CASSAVA X SOY BUTTER: Broil the already-seasoned toothfish for 5 mins. Stir-fry the spinach with garlic, pepper & salt. Torch the fish & sprinkle pepper on top. Plating: Place cassava puree, spinach and toothfish on plate. Top with butter foam and herbs.
🥂LONG AN DUCK X CHU HOU X DAIKON: Saute the dry-aged duck breast. Place Japanese radish on the plate and sprinkle Japanese pepper on top. Continue adding Chu Hou, duck breast, tamarind sauce and garnish with scallion and other herbs.

honestly u cant really have 15 different foods if the portions were normal sized while it def. is expensive it is also way more labor intensive each one of those meals take more effort to make than your standard 15$ burger set (assuming youre getting a good burger and not the MC quaity ones ) but yeah those restaurants do have big margins per ingredient but unless they are underpaying their staff there is hardly a huge difference compared to your average restaurant in profits if both are fully booked.

Why its expensive, because you must pay experience chef to make it for you beside its high quality and healthy food , you can't make it yourself at home, you dont have knowledge

As a chef I can relate to fine dining, but when I cook for myself or if I go out I prefer comfort food and street food. Especially in Southeast Asia. It might be challenging to run a fine dining restaurant in a place where street food is so good and has its vibrant culture.

I only had one experience with fine dining like that and it was a 12 courses. At first, I was like "Damn this is small, might need a Big Mac later," but after the 8th course, I was like "There's 4 more?!" and I am a big eater.

additionally, most of the time, they make stuff from scratch instead of buying them, like puff pastries, soup stock etc and they carefully select their suppliers too. Making them takes time and that is put in the cost of the food, hence the expensive price.

Sadly many “fancy” restaurants purposefully misunderstood the concept and just offer tiny food for ridiculous prices just because of the destination and looks. This is the biggest mistake I made in Rome, I went to eat at the downtown, where everything was overpriced and you stayed hungry afterwards, even the taste is mediocre at best.

And it's very clear you went to a tourist spot and not fine dining. Fine dining has small portion but there's at least 5 courses and up to 12 courses. You absolutely will be full. You can't also just show up to a fine dining restaurant, unlike tourist spot who can't wait to get you in the door, you need a reservation. Again you clearly went to what you think is a fine dining place but you seem like you don't know the difference.

@@makuletreg15 I'll not waste my money on that food even if I can afford them....it can barely fill the stomach and gives no satisfaction in eating when they all taste the same....A piece of steak in a good normal restaurant is 50$ while the same steak in a high-end restaurant is 500$...if garnishing it with some leaves and veggies and the same sauce served on some flashy-looking plates and forks will cost an additional 450$ than the food itself then no sane person will waste their hard-earned money on something like that.

The idea of small courses and a tasting menu is to be able to enjoy a multitude of flavors and dishes and the biggest thing of all your taste buds do not get bored since you are constantly getting new flavors. I always said I had a fine dining appetite but on a taco bell budget. Learn to make some of this stuff at home and you will save a fortune. The experience is still amazing though if you can afford it, not something I can do very often at all, been years since I went into a fine dining restaurant. These days I rarely eat out and cook at home.

Its for the experience! In a decent restaurant if you get a tasting menu, you will get many small portions. It could be anywhere from 10 to 25 plates, not including canapes, petit fours. You also usually get 2 or 3 desserts! If you are not full from a tasting menu, you are either a sumo in training or its a bad restaurant...

I think ‘fine dining’ is just dining where the food experience comes first. It’s not necessarily using the most expensive ingredients. More like, regardless of price you use the ingredient best suited to your task. And if that task begs a Japanese orange egg or a store bought American frozen egg, then so be it

Even 9 bags of potato chips will fill someone up equivalent to a meal. It is pretty reasonably priced for what it is imo. Each plate was under $10 for something that you could almost never replicate at home or find anywhere else.

If you add up all the food over the courses that is easily over 1300 calories of food alone not including whatever you might be drinking. You really shouldn't eat more than that for a meal and if you do perhaps you should think about changing diet habits.

The biggest reason why the portion size is small is, there is a thing called flavor fatigued. The first two bites will always be the strongest and most flavorable part of the meal. So if you get a bigger portions, it will never be as delicious as when you first take a bite.

Been to fine dining several times just for the kicks, and I can say the price tag is due to taste experience and art, and maybe premium ingredient where applicable. Even though they gave out stuff in really tiny portions, for some reason, I was almost full by the end of the course. I guess the way the chefs structured the course and ingredients have some gastronomic sense .

Actually, if your food is jam packed with different kinds of flavour, you feel fuller even with small portions. Salt and sweet slathered in grease makes you crave more of it (yes, very similar to alcohol) and so you need larger amounts to feel full.

Its because you slowly eating those tiny portions. You can accomplish the same at home with nasty food. Just eat small portion (like 2 spoon full), wait 5 minutes, eat another 2 spoon full etc. - after the 5th or 6th time (around 30 minnutes later), you're not hungry anymore. Especially if the food is fatty/oily. We have just learned bad habits nowadays of shoveling tons of food in our mouth in a very short period of time, especially high on carbs/sugar, which you can eat more of it, than fat and protein.

To better answer the question of why a tasting course is so expensive: you're paying for the countless hours of thought, knowledge, skill, and care that a whole team of chefs put towards a unique dining experience. When my fiancee and I had our first omakase at a nice, but unassuming Japanese restaurant, it was a 2.5hr+ experience that we had to reserve 3 days ahead for so that the chefs could plan for the meal. We were sat at the sushi bar and the chef would explain the entire process for how each course arrived in front of us--from the conception of the dish, to the selection of the dishware/ingredients and their origins, to the preparation of the food, the symbolism in the presentation, and its role in the whole meal. We were stuffed by the end, learned a lot throughout the process, and didn't feel scammed at all.

I’m beginning to think Vietnam have the best foods. Anthony Bordain and now Sonny practically lives there and praise all these dishes. If these two men whole heartedly loved these foods and swore by them this much, i’d Trust those sources more than Michellin star reviewer. I mean with the amount of travel they went, and the things they experience being in different cultures and being as knowledgeable and thoughtful as they are and they chose to love these foods as much as they do, the flavors and tastes of these cultural foods is a must try.

Aldi might be known to be a bargan grocery store, but they don't cut costs with the food itself. Their sourdough for example is actually really fucking good. First, my largest tasting menu was in Lima Peru at Central and it was a 17-course meal with wine pairing. We were eating like 3 and a half hours haha. Now about the video. I worked in several fine dining restaurants around the world, and I can say that most of the price is for the experience that the restaurant needs to create for its customers. It could be very costly to manage and run a restaurant like this, where people spend between 2-3 hours eating. The staffing on shifts, design, plates (oh plates are so expensive), and the food too. As you said the chefs are trying to your premium ingredients like organic or sustainable products, but those things can run costs so quickly. This is also something sad because the economy of scale with the globalization that we went through with products made in other countries cost less on the market than local sustainable produce. The big producers are slashing prices and make it so difficult to rely on local products where prices sometimes fluctuate so much. Also, the lack of understanding of people on what is going on behind the nice tablecloth, lights, the open kitchen does not make it easier. Hopefully, you will make some sense in those videos. Just watches this one and the food looks great and lovely. Also, the 4K makes it AMAZING!!! Thanks, and A Peace ✌✌

Used to do some fine dining stuff a time ago, usually it was set out in tasting plates 3-5-8, not really large in themselves but they were quite labour intensive to make, I use to hate pate but grew to like it and tartare after tasting it every other day making it. It's more a show of skill and quality from the kitchen than quantity, and with 5 small plates you could still end up full.
