Why is Pakistan's BBQ SO GOOD?

Have you ever tried Pakistan's salted sheep barbecue? Would you go to Pakistan to try this? I did!
There are 3 things that make this barbecue so good:
First, in Pakistan, they have butchers inside their restaurants so the meat is always fresh. The meat is also of the big-bottomed 'dumba' sheep.
Second, this dish requires just one ingredient, salt. So it really relies on the quality of the meat.
And finally, they don't baste with oil or marinade. They baste with the animal's own fat and barbecue it slowly over charcoal.

Many people are asking about why the man is using his feet? Okay first see carefully, he is holding a sharp heavy knife. Normally we hold meat and move knife on it, but here technique is opposite, we hold cutter with feet and move the meat on blade. This is used here in our country India also and even Bangladesh. Read about the religion and local culture and Pashtoon people's culture too. Absolution is done with clean water 5 times daily before each prayer and the butcher always washes his hand and feet with soap before doing this. Experienced butchers mostly do this as it saves much time plus he's a bit chubby too.

To be precise, the technique is used in Peshawar and possibly Quetta - not all over Pakistan. If you wonder why, it’s because these are Afghan/central Asian bbq techniques and the rice dish is Qabli from Afghanistan. Peshawar was the winter capital of the Afghan kings a century ago, hence, mostly the same language and culture as Afghanistan. Thank you.

Guys give attention to the charcoal. No flames whatsoever. Even colour is dark, not red. That's a key for amazing bbq. If course there's different technical, which requires flames ect but this technique is out if this world. I Strongly recommend it if u haven't tried cooking that way.❤

The meat of the sheep is quite fatty, it gets slippery very quickly due to body heat, and the warm environment in general, so youd want maximum grip the meat. Thats why they used both hands. Also, when the knife is placed like that, it cuts the meat easier as the meat is almost stretched out a bit rather than laying relaxed on some surface

The food I had while visiting southern India was incredible and packed with flavor, no need for meat. A balanced spice mixture is key, but my favorites usually include chickpeas or lentils with greens or root vegetables. Being pure veg is quite easy; thank you for your interest. As-Salaam-Alaikum

Though i am from Mumbai so never visited Pakistan but there is small number of pathan community lives in Mumbai including members of former pathan mafia of Mumbai underworld, so there was an elite rich pathan guy of afghan origin who now passed away he used to give party at Ramadan in rizvi college in bandra both iftaar and dinner, and we have tried pulao which we called it afghani or pathani biryani and there was a rosh kind if dish we called it pathani gosht in the dinner and it is their traditional dish, so many members of pathan gang members and even some Bollywood guys also used to visit in the party.... I never ever tried such a delicious pulao and gosht with few spice without any red chilli powder... Chef told us recipe of gosht and i always cook it after eid ul azha, really really yummy!! I am a rajasthani muslim but i want to try afghan foods

@@mr.t746 it doesn’t matter even if you wash yourself 5x a day, fungus can still develop. It requires a weak immune system and it will grow despite washing. Fungus can grow all over the skin and you can spread it to others also.

Same in Turkey and most Middle Eastern countries. We have butchers in restaurants and you choose the part of the meat you want to eat and they will prepare for you. Not just the meat, fish as well.
