How on earth would that be flattering? In the book it is written specifically that the human form is too limiting to be of interest of the great race. H.P.Lovecraft likes poking fun at ourselves a few times in his books.

It is stated that their body reproduce asexually when in contact with water. Usually they just mindswap with their offspring when they are too old. So they get a new body and a new child just dies confused in old body

The individuals they took over were transformed. They became sexless, reproduced by seeds (very rarely) and no longer aged. The molluscoids were truly no more once taken. It almost seems a mercy to swap them though. Would be better that than parasitically ridden, a passenger & prisoner inside your own body under the yiths control.

I would like to note that it would be mathematically difficult to have the exact population of two species match before the switch. It would be much easier to just taken over 80% or 90% and just explain to the new minority that some changes have been made. Although, using time travel meeting the exact number would be lots easier.
