Growing up in India, whenever we were back from travels or had a hard day, my mom would always say “let’s make khitchari today” and that continues till date. I love khitchari’s taste and how it makes me feel all warm and cosy. I live abroad now and my love for Khitchari is the same. I cherish these traditions so much. Wonderful video

Thank you for asking, Daniel! Though we are not well-versed in cooking with an InstaPot, we estimate the approximate cooking time to be twenty minutes. We suggest adding the vegetables to your kitchari about 5-7 minutes, prior to completion of the meal. As for the ratio, it’s kind of a “trial and error” situation where you may need to experiment with what works for you and your pressure cooker. Somewhere between 2:1 and 3:1 liquid, depending on the kind of dal used. Bon appétit!

The problem with making mung dal and any bean/legume/whole grain in general in Ayurveda, is that 25% of the population has what is called the Lewis gene (blood antigen system). This means that it is virtually impossible to eat foods high in phytic acid, unless they are sprouted AND fermented. Otherwise, I run the risk of having massive dental caries from eating foods not prepared in this manner. Others encounter other challenging health conditions as well. It would be so helpful to do a video on how to go through the process of sprouting and fermenting said mung beans, and other whole beans/lentils/grains. Trying to contend with my current condition AND having to try and figure out how to sprout and ferment can feel extremely overwhelming. Thanks for listening.

If you switch the rice for cauliflower rice, does that change it's effectiveness since it won't make that complete protein? I recently found out I'm allergic to rice so I was curious if switching the grain to quinoa or cauliflower rice would lose the effectiveness of the dish. Hi @hmclot! Thanks for your question! You can definitely alter the ingredients to help better support your body. As it is, Kitchari is balancing for all Dosha types. In regards to an alternative to the Basmati rice, I would take into consideration what would be more balancing to your dosha. I am thinking of adding an evening cupp of cashew milk to my first kitchari cleanse. How do you think this would affect the cleanse? Also, what about adding one or two veggies? What a pleasant video! I've got a question, is it OK to make a batch and freeze or refrigerate for one day when doing a cleanse? I'm struggling with the leftovers guidelines from Ayurveda 😭. My thinking is, since they didn't have freezers in ancient India, the leftovers rule makes sense. However, when I freeze something straight away like pieces of freshly baked bread, it is delicious and very fresh when defrosted. Surely there must be lots of prana left there! 🤞🙏😂

Actually your body has to work hard to make it into a solid for you to pass and theres no fiber so its more work but this is on their own perhaps try smoothie bowls with some toppings that will add some fibers. I know because i learned this the hard way myself in cleansing works. If you prefer juice just have aside a cleansing dish like this. Remember each dosha needs different things so try to listen to your body with care in mind not going against in sake of purification please.

Aren't barley and oat rather warming? Barley has been even used traditionally in the Himalaya region. Also the combination of rice and legumes is not totally a whole protein, it would need more methionine eg from sesame seeds, I know though that spices can have the function of extracting more nutrients from the food/plants, thus it may be the case more or less with some such constellation. Thanks for commenting. We learned of it under the name "kitchari," but "khichdi" is also a name it goes by! It has accumulated many names over the years. The version we make at Banyan is vegetarian, since we use ghee, but it can be vegan if you substitute ghee with coconut oil.
