In my email sig I state my hours of working. In my calendar, I also clearly mark out my times for lunch and 'unavailable' after 5pm. That's not to say I don't work late if required, but that's certainly an exception. Saying 'no' is one of the most important design skills you can have. Just remember, as one comms colleague told me one time 'it's PR, not ER'. No-one's going to die overnight because you didn't send another version of the logo.
