Your explanation is partly correct. I think you should check one more time. Red light is also used but for more detail analysis in hospitals. Red light gives more depth information because longer wavelength has more tendency to penetrate deeper . In smartwatches we cant install complex sensors used for longer wavelength lights. In brief we can use both red and green light.

the green light is less susceptible to ambient light. This means this green light will not affect much in ambient light compared to others and in this way, this light can give more accurate results while performing the puls sense activity. As simple as that .
