Why Were Forts So Important in Wars?

In ancient wars, attacking armies always attacked a fort before entering an empire's boundaries. But why did they have to do that, really? Why couldn't they simply bypass forts and just attack the main fort/palace where the king lived? Why waste resources and lives of soldiers on forts on the way to the palace?

Sir one question - You described the necessity of forts in old times but why in the 21st century forts are not being used for bases? I know we have democracy so the leader cannot sit in the red fort but forts on top of hills, close to seas can be used for the army.
