It's interesting because some sushi places in the US will have their sushi come pre-sauced, so it's kind of hard to eat it with your hands without making a mess.

Heyhey, it's the culture bridge man! Been watching your stuff since I was, genuinely, a child. and yeaaah, sushi in (almost!) any nation outside of Japan is going to be questionable. Almost! I am sure some people have mastered it, but we have sushi conveyor restaurants here (UK) and... they don't quite match up. As for the sushi geta, I learnt this from a Yakuza game. (>.

An old japanese friend of me told me that: eating sushi with hands is a way maintain the connection with the cook who made that sushi. He made it by hand, so it's a "From hand to hand" human connection act.

Similarly to fatty tuna, lobsters used to be considered low-quality food, only eaten by poor people who live by the sea, and more popularly used as fertilizer. Once they could can and freeze food, it became a delicacy in inland cities. Today, it's one of the most expensive foods out there. Poor people usually can't even afford it.

I live in the USA, but I happen to be a sushi chef. Most of it is very different from traditional sushi, there's quite a few of them with some amount of sauce involved, and even some with cream cheese (called Philadelphia rolls, named after a brand of cream cheese, and is paired with avocado and smoked salmon). Most of our rolls are uramaki, too. One of my favorite uramaki rolls is spicy tuna, which uses ground tuna (mixed with shichimi, toasted sesame oil and sriracha), and avocado. The roll itself is topped with some extra bit of shichimi for garnish. And now that I'm thinking about it, I'll probably have one for dinner tonight.

If the rice (Japanese short-grain) hasn't been cooked with kombu (kelp), and then seasoned with vinegar, sugar, and salt, the final product is not "sushi," but merely a rice roll.

Gari is definitely one of our favourite parts of eating Sushi and is a wonderful palette cleanser, admittedly though for quite some years we used to put it soy sauce and eat it along with the Sushi.

"Fatty tuna was garbage." This happens with fish. They go in and out of style. Another example is what we now call "Chilean sea bass" - it was considered garbage fish fifty years ago. It became chic in the 80's, but before that nobody wanted it. Go figure. 😆

I was in Japan for 3 weeks in 2018. And not ONCE did I eat Sushi there, because my travel companion didn't fancy fish and was more interested in Ramen. Until this Day, I regret it so much ; v ; We do have an Asia Restaurant that makes delicious Sushi but it would have been so much better eating Sushi in Japan , haaaaah...the pain haha

Fatty tuna became expensive because it's rarer compared to the whole body of the fish. Just like lobster. Lobster was a poor people's food elevated to elitism. (just as sushi was but don't tell anyone)
