A lot of people don't realize that soy protein is a good source of non-animal based IGF which is critical for our aging bodies. And it is clean IGF that doesn't have all of the issues like animal protein. I have been watching you videos for a long time and you really turn a block of tofu into food people can enjoy. My culture literally made tempeh (I'm a Javanese Indonesian) and we've been consuming soy for hundreds, if not thousands, or years and we're... fine? We're very healthy, actually, grandparents still work on the rice field, before the processed food came in, because my ancestors might be tinier and shorter, but they were very well muscled. I literally have a super healthy friend who is 99% vegan because she cannot afford animal protein, so there's that too.

I fond you during COVID Shutdown. I assumed that I would go from Cane to Walker to Wheelchair and finally bdbound to grave. I started trying your recipes and other Vegan Chefs and Cooks. It helped me to experiment with Flavors and different plants. Fast forward to today and 120lbs less. I am moving and eating incredible food. Now my non Vegan friends are asking for recipes and advice. I tell them I am not on a diet, I just eat the foods that fuels my body and nourishes my appetite. I found that when you eat the right foods in the amounts your body will Reset itself. Now when I clothes shop I don't have to be in the Plus Size section and after 20plus years of Big Girl shopping. Thanks Derek!!! COVID reset my life you reset my appetite. ❤

Derek I don't think you'll see this message because iv commented before and probably because of all the negative ones you didn't see mine , but here I go anyway, I want to thank you for all you do ,you have been an inspiration, I have had health problems and wanted to turn my life around and one of your videos was one of the first I saw when I wanted try to eat a more plant based diet, the sad thing is I live in a small town in New Mexico and I cannot get my hands on any good mushrooms not even when I travel one or 2 hours to the bigger cities . But I make due with what I have , I try your recipes with the exception of tweaking the cooking method as I don't have a working oven ,but my airfryer works just as good . it is actually pretty easy to home-grow mushrooms using pasteurized hay and plastic bottles or buckets; the dry climate in new mexico might diminish your returns, but you don't even need a whole mushroom to get going.

@@iamgamer884 She's in the boondocks, for real. Food variety is limited. Living in a rural area, in New Mexico really IS in some cases living in a food desert. The eastern third of the country is more populated, so is the West coast. Where she,not many people there, period. Same story on Idaho, Wyoming, the Dakotas, areas of Texas, Oklahoma, Kansas, Nebraska, etc. driving 45 minutes just to get to a small grocery store is par for the course there. I hope she can find what she needs on line.

@@kishap1251 I've been to New Mexico. Most of it is rural. I think Albuquerque may be the only really big city. Santa Fe and Taos aren't that big, really. It's sort of desolate, I guess. Just you, the sky, the mountains in a lot of it, some prairie dogs and the horny toads kinda place. Nice purple mountains, around Santa Fe. I always wonder if that was " for purple mountains majesty" of the song when I see them. I like the Hanuman Temple in Taos. It's wetter in the northern part of the state, isn't it? The northern portion has trees. I was usually down around Santa Fe, Madras, and Albuquerque. I'd rather be up in Taos. Silver City looks beautiful. Haven't made it that for over, though.

Treat it like a marathon, not a race. It may take you a while to become fully vegan/vegetarian. Starting as small as swapping out one meal a day one day a week, as you learn what to eat and how to cook it, you will eventually swap a whole day a week, then an entire week out of a month, then two weeks, and so on.... Next thing you know you will have learned to cook a variety of meals. Once this happens deciding what to eat and how to cook it becomes less daunting..... :)

Ever tried the freeze+defrost method? I stumbled across it somewhere here on YT and it's upped my tofu game massively. It makes all of the water inside the tofu expand into these little spears that cut holes through the block, then when you defrost and wring it out it gets way more spongey than a regular "press with a towel" method. Then make a wet marinade (any of those yeast blends, with some soy, water, and oil) and let it marinade over night. It actually soaks into the tofu, rather than just clinging to the sides. Then bang it in the oven or fry over oil. Massive tofu gamechager

@@briberysproductionhouse - I raised my children on this! I think they call it 'snow tofu' in Japan. I would cut it into finger sized pieces so there was a lot of surface area for coatings. I used vegan mayo with tartar sauce spices and panko for fish sticks, and peanut butter mixed with barbeque sauce for bar-b-q. I did a teriyaki tofu too. The kids loved it. Kids don't like to feel different, especially when they have friends over.

Christmas Eve dinner was all plant based vegan did your tofu spice encrusted baked and fried in cast iron with roasted veg like brussel sprouts, your butternut fillets with Whistle Pig maple syrup drizzled on top , sweet potatoes cubed roasted with cumin etc spices and in a moment of inspiration covered cauliflower with vegan yogurt, nuch with smoked paprika etc and Franks hot sauce with some vegan yogurt mixed with nuch and Franks hot sauce to dip , I can only think of Miss America when I hear Franks hot sauce. Green beans, mashed potatoes too. I watch you and just let myself try. I always love eating it even as I’m working my way to better final product. I might be most inspired by the pace of patience you model as you create delicious plant based meals.

Merry Christmas Derek and Frankie. I made these tofu recipes for my Christmas dinner tonight. They were delicious. I made 4 so I have 3 for more meals. Unfortunately I had to be with my family who ate a Turkey and other meats. It hard not to say anything but I’ve had to give up trying to make them see reason. Now my sister is on the Carnivore diet 🙄 and telling me that plants are poisonous and killing me. 🙄I’m biting my tongue. The Best of everything to you both for 2025 and your move back to the US. Awesome! I would cut the tofu in slices before the seasoning, it makes the flavor go on more surface if you are not accustomed to the taste of tofu, it's a better introduction imo

@@DerekSarnoChef Well said. I watched an interview with one of the guys who developed Impossible Burgers on the Rich Roll podcast a few years ago. The idea was to eradicate factory farming never intentionally meant for people who don't eat meat for ethical reasons. That doesn't matter. People are going to quibble but I don't care if I live to 130 I just want to live the best life I can which sounds totally pompous ... but I have a limited income and I manage really well. My late husband was definitely on board; we both loved to cook and it just naturally happened.

Suggested homemade "steak" seasoning that I used when making this delicious and easy trio of tofu: 2 Tablespoons kosher salt 2 Tablespoons black pepper 2 Tablespoons garlic powder 2 Tablespoons smoked paprika 1 Tablespoon onion powder 2 teaspoons dried rosemary 2 teaspoons dried herbes de provence (French mix of basic herbs)

I noticed alot of recipe influencers dont care for pressing tofu, but honestly freezing/defrosting the tofu, which helps get all the water out, makes a world of a difference for me when it comes to texture and the tofu actually getting marinated. Otherwise it just feels like only the outside is getting flavored

I love tofu, but it took me some years... We went nearly totally vegan (still had some meat in the freezer) at the beginning of the year and i came across your channel right now (iam german and there are some pretty good vegan german channels out there too). You are amazing, Frankie too, you give me so much inspriration to use ingredients i don't use very often (or at all) and it's so much fun to watch you preparing food, that is kind of a meditation, nearly as cooking myself even if i don't have the time to do it. How wonderful to wake up to more inspiration for tofu from you! I’ve made all your rub/seasonings except the really spicy BBQ bc I’m a whimp, and have used the eggspired several times. Had planned to do something similar to what you showed with another one soon. I’m a lone vegan in a house of omnivores, retired nurse. Love getting inspiration for easy quick meals with as little prep as possible. Turning an old chicken farm into growing mushrooms is an amazing idea! I wish there was a bigger push here for that in the US. Mushrooms of those varieties can be hard to find where I live, but are available at certain health food type stores and are pretty pricey. I’ve seen them at a few odd places at times as well but do not seem to have caught on here….yet. Thank you Derek, for continued inspirations…from Nashville…..🙏🏻🫶🏻xx

Thank you! I did see you cook tofu in a block in another video. I started doing this right away. I use a bit of tamari for wetness and managed to get my favored pepperoni spice mix to stick. It's superb and an improvement for time and mess. I couldn't believe I had never seen anyone doing this before. I could just cry when I saw you turning the chicken farm into a mushroom farm...thank you deeply and forever for this humane accomplishment.

So many online recipes for tofu call for soy sauce which I don't want to use due to the sodium. Even the low salt variety is too much for my purposes. So I just wanted to thank you for these additional ideas on how to flavor and cook tofu. I usually make tofu or tempeh with Italian spices. I love the calm vibe of your videos. Thank you !

This was very informative. I've always struggled with learning how to make tofu taste good, and this helped a lot. A note: if you take previously frozen firm tofu and defrost it, it's much easier to drain the water out without breaking it up, and the texture has much more "bite" to it once it's cooked. 😊

Derek, I never leave comments but I have recently discovered your videos and love your demeanour (and recipes -- making your fast tofu burger again for dinner tonight). Picking up your book from the library today. These fast recipes are great. I always slice the tofu into big cubes or tear it into chunks, but leaving it whole is even faster! All the best.

I love this video and the idea of prepping very simple bulk items that can be used throughout a week. I have very little time to cook and I usually end up eating raw tofu on some kind of sandwich I slap together with whatever's on hand -- and, while there's wrong with that, preparing cooked tofu in bulk on the weekend would give me some more variety and a little flare that my raw tofu lacks :-) thanks so much for sharing.
