The meat we put up every year is the number one reason we hunt. We depend on game meat throughout the year. I came here years ago for the skulls and stayed because of the direction you come at the hunt, processing and yes cooking. Dont be afraid to show the cooking Ryan, I know I personally enjoy seeing them after a good hunt. Look forward to every video brother.

That makes sense, a ten year old senior bull goat being tough. The fact that using the braise method broke it down makes sense too, but the fact that it took 9 hours is crazy. Must have been a baddasss animal

The first time I cooked a wild pig it was so tuff so I thought I'll cook some chile verde with it. It was OMG good. Cooking game is just a continuation of the hunt. Great videos 👍

Great job and going to recommend a pressure pot for stew. Shot an old 6x6 bull last year he is tough. In an hour in a pressure pot stew mix it falls apart and so good.

The "browning the meat" process, as you called it, is called "searing" the meat... So, you "seared" the meat... Just be careful with the amount of oil you put at the bottom of your pan coz if you put too much, you can end up pan frying your meat instead of searing it... And for the meat to be tender, you need to cook it at a low temperature for a longer time than if it was cooked at high temperature... If you really wanted the meat to be tender... for example: for a stew... then don't sear the meat... just cook it at low temperature for a long time... The longer you let the stew cook, the better the taste will be... the flavours will all come out and blend together... Then, let it cool down and rest for a day... that will allow the flavours to intensify even more... then reheat the food and eat... Of course, you can skip the "let it cool down and rest for a day", if you wanna eat it right away lol... Oh! And you don't need to cook it in the oven... the same can be achieve on the stove top... Especially if it's a stew, I would avoid the oven coz then you'll end up wasting a lot of cooking time... the stove top is way better and faster to achieve the same result... One last thing lol... Sorryyyyy lol... It's not sous "vi" (or sous-"vee")... it's sous-vide (the "vide" is pronounced like the first syllable of the word "video"... "vid"... so, you'd say... sous-vid... The French words "sous" means "under" and "vide" means "empty"... in this case, it refers to the fact that the air was removed from the bags where the food is )... I really love your videos! Hey Ryan, this looks A-amazing bro thanks so much. Can I make a small suggestion when you sear? I noticed you over crowded the pan when you were searing it, if you put maybe three or four at a time you’ll get a better sear, deeper color on the meat, & more flavor. I’ve been a professional Chef for 30 years and really when you overcrowd your pan you’re more steaming than frying or searing. Just PLEASE take this as advice and not criticism. Thanks Man. 👏👏👏
