Janis Putelis put in some serious work to harvest a mature Bighorn Sheep this year and Chef Kevin Gillespie wants to show him a way to prepare it that lives up to the effort Janis put into the hunt. The pair spends all day creating an ancient Kashmiri Dish called Rogan Josh, along with homemade Naan Bread, before finally getting a chance to taste their hard work.

As a large buy with a red beard I have heard this so often... Of course never saying I knew my way around the kitchen but I pretty much hear it every winter when I am out in the snow and apparently I look like him

Thank you, to all of the team. Simply put, as an Alaskan I was raised to appreciate our shared lifestyle. But to see it documented, and executed, in such a wonderful fashion, and then to see a proper chef cook consistently amazing dishes... (I have 15 years culinary experience and ran a small specialty catering company for a while before Covid) it's inspirational and comforting in the best of ways. This team you have assembled, will help bring understanding and appreciation of the ways, traditions, and means, of a natural harvest and the conservation of said resources directly to the masses. You're doing a lot and doing it well. Thank you all.

A couple of tips for the Naan bread, use a cast iron skillet, wet the bottom of the rolled out dough and press it down into a hot skillet, when the dough releases its done on that side, you need to see char on the bottom... you also need to brush it with melted butter once it's done cooking.

I love all of these episodes, but this is my favourite yet! I love how much reverence is paid to the animal and the hunt. Kevin absolutely did that ram justice! I could listen to him talk about cooking all damn day. Also, exciting to see Jani's infamous turkeys! Now I'm inspired to go grab my dabba masala and thaw some wild game!

Great video. Always a fan of both of these gentlemen. I don't want to be the nit-picky commenter, but pulling that echo out from having multiple lav mics is pretty easy. I'd encourage you to research it and see if you can overcome it in post. Keep the videos coming! I'll be here, watching. :)

Love that on-the-bone Rogon Josh. RJ is a favourite of mine. On the bone has to be even better, even if I can't get such a rare delicacy as in this video....

You guys should come to South Dakota, we have good pheasants east of the river, good grouse, mule deer, antelope, elk, and big horned sheep west of the river, and white tail deer and turkey all over the state.

@@gregkosinski2303 no, but we call the half of the state west of the Missouri River west river and via versa because the Missouri runs pretty much down the center of the state and its the biggest river here.

You don’t need a Sawzall Janis, but it helps to freeze the shanks first and a bone saw or hacksaw works well on frozen shanks. Another reason to freeze the shanks and then cut them is that the bone dust is easily washed off the frozen shank. What you guys did put the bone dust into the meat, and that’s gonna show up in the flavor.

Points for - 1. Having a dabba and grinding your own spices (I also get lazy and use packaged spices) 2. Using copious amounts of butter - same as ghee. 2. Not burning the ginger and garlic (I sometimes still do) 3. Not using extra stock - not necessary with the spices being used 4. Naan. (It's a labor) 5. Finishing the curry with fresh dhania - a must. I thought you missed it but see it in at the end. **Bonus points for using cast iron cookware. I'm South Indian and try to be as authentic possible using aunts and relatives recipes, though I fuck it up sometimes. You made that so fucking effortlesly, I'm adding it to my recipe book. 📖 Great job man. 👏

@meateater. The term Trotters generally refers to the actual feet. Luckily I saw the video first so I got the shanks out, I’m not sure how well this would turn out with trotters. Almost pulled some out had re reading this to make sure I didn’t miss you throwing some in.

Pro tip: popcorn cooked in ghee is really good. You get butter flavor without burning milk solids or having soggy popcorn.

If you use a smaller saw when cutting them shanks, you won't notice the Particles of bone in the end product.

Bighorn sheep meat is my favorite game meat. Too bad the tags are so hard to draw. I drew my tag in 2009. I wish I would have got a ewe tag as well.
