Love this idea and do something similar, just much simpler. Pork ribs, tips, chicken wings, sausage, corn bread and pasta salad. Love a variety.

Excellent video. I typically start my brisket at 9am and smoke for 12hrs and then another 12hrs hold and serve by lunch the next day. That's how I avoid over night cooks and waking up early. 😉

Awesome vid! Would appreciate your help if you’ve got the time. I’ve done turkey breast a few times (following your process) on my Cactus Jack and they always end up dryer than I’d hoped, even with a wet brine. Smoker and meat temps were all as expected, pulled at 145/150 etc… I feel like Ive done everything right, yet they’re never juicy. Any ideas where I’m going wrong?
