Your video presentation is the perfect combination of entertaining and informative. It's great to have someone as knowledgeable and skilled as you representing the UK BBQ scene and this video is a perfect example of why you're the best BBQ channel on KZbin right now.

Excellent video. I typically start my brisket at 9am and smoke for 12hrs and then another 12hrs hold and serve by lunch the next day. That's how I avoid over night cooks and waking up early. 😉

Awesome vid! Would appreciate your help if you’ve got the time. I’ve done turkey breast a few times (following your process) on my Cactus Jack and they always end up dryer than I’d hoped, even with a wet brine. Smoker and meat temps were all as expected, pulled at 145/150 etc… I feel like Ive done everything right, yet they’re never juicy. Any ideas where I’m going wrong?
