And one more question? When u built the cinder block foundation, did u leave a chunck out at the bottom like u would in a grill or a smoke to adjust for the air flow? What’s that called a damper?

🤣😂 I don’t think you got a clue what we get here in the states. Plenty of grass fed briskets out there in the big box stores and we have hundreds of small farms with even higher quality briskets so…. 🤷🏻‍♂️

I’ve stupidly bought a whole (quite big bird) planned on brining and smoking.. recon I’m best off smoking as a crown or removing the breast entirely?

I prefer to remove the breast from the rib cage, smoke them like these in the video and use the bones for stock. Use that stock for gravy

Have an off set that has threaded openings for prob gauges. Would this work based on the threaded inputs. Thanks

I haven’t tested it on mine yet, but I believe it’s going to entirely depend on the width of the threaded opening. However, If it’s too big, it might be something that a pair of the right sized washers may help with!

I did the same thing with my Weber kettle with a $10 thermometer. I measured the radius of the thermometer then drilled the hole directly under the adjustable vents as this puts the probe as close to the grill grate as possible and as far away from the coals. This digital one looks pretty awesome and it's cheaper than most wired probe thermometers.

$70 aint too bad. I was half expecting something that cost more than a new weber. I think I'll stick to the probe thermo that has 4 leads and is bluetooth I have. If I was in the market I would really think the S1 over.

Seems cool but what's your view on these sort of temperature probes Vs the "near/on the grate" temperature probes? Always seen folks say lid probes are always off compared to a probe at grate level

i think this is a better idea for offsets than the probes trying to read an offset inside temp. i dont need to know what the meat is doing i need to know what i need to do with my fire... i already have a good feel for when i need to go out and add more, but this would just let me be a little extra lazy

The link to the Chefstemp website takes you to the US site with everything priced in dollars and therefore, presumably, will be exported to the UK and incur very high P&P. Is there a UK equivalent site for ordering in the UK?

I've been using the entire system on my Bronco drum and love it. They actually had me beta test the S1 and BreezoFan. Awesome combo!!!! Love the functionality of the digital gauge.. readout is big and lit so you can see it while outside.. or can check your phone or smart watch while picking up some stuff you forgot at the store. Totally agree with your choice of placement on the lid. Can't believe Weber hasn't changed orientation of their gauge yet. I put mine lower than you did.. causing it to run more horizontally across the grate. Thinking I should have put it up higher which makes the probe point straight down.. taking up less space inside. Did you check out the temp "compensation" feature? 👊🏻💨💨💨

Great video! I love my S1 paired with the wireless probes and Breezo fan. I'm a tech junky and the products really help take my BBQ to a whole new level. The S1 and Breezo fan have made my life easier. I can get the cook started and go about my day, checking the app and getting alerts while I get other stuff done. Love it!

Looks like you can buy a separate base for other grills/smokers and swap the same head unit on so you don't need more than one.

I run the S1 on my offset. Being able to glance at your smartwatch to check on temps is amazing. Sure you can go out and physically look at your gauges but you save a lot of time just having the temp data sent to you. The Breezo worked flawlessly on my drum smoker. Great video!

Couldn't agree with you more on this. I have the whole kit - S1, probes and breezo and have been using them for the last few months. I've had wireless probes etc before but they always fell short of what I wanted them to do. This kit is a true game changer - especially the breezo for low and slow cooks. I've messed up a few of the latter in the past when I've taken my eye off the ball, but having the temp controlled by the fan and the app on the phone, it really is fool proof. App has loads of functionality but is also simple to use without delving into all the extras (unless you need them). 100% going to grab some more probes soon and this is the core of my cooking experience sorted.

Chefstemp stuff is an absolute scam. I got their protemp plus from kickstarter and the thing is absolutely terrible and innacurate. They need fw updates to fix inaccuracies in the probes but they just dropped support once they got the money. Also, their app is decrepit compared to competition. Avoid Chefstemp stuff like the plague. A real shame this channel is succumbing to peddling absolute shite for advertisers, unsubscribing if this is what it's come to.

@ nice one. I wonder what the battery life is like for a long cook. Anything that keeps me out of the miserable cold weather would be a bonus. I was eyeing up the RFX for the same but I like it as simple as possible. Less things to set up, break, lose connection and run out of battery. All of which seem to happen to me when I try and get clever. 🤣
