Question: What wine would you pair with Peruvian fish Ceviche? That thing is super high on acidity since the fish is cooked with lime. Some whites just fall really flat with it.

I like Ceviche! I have never had Peruvian style but I am sure it will be great! Some Sauvignon Blanc will go great with it! SB is high on acidity and will pare well with the Ceviche! Great question!
