I'm not even usually someone who cares about the romance too much, but I just watched FMAB for the first time recently and I fell so hard for theese two. I do admittedly have a bit of a soft spot for childhood friend romances, and this is among the best executed ones out there. And yes, a big aspect is that both Ed and Winry are great characters individually, the latter isn't just reduced to being the "love interest" as is too common (no female character in fma is, which is great, and a big part of why all the canon romances in general from there are so well-regarded). The first confrontation between Winry and Scar is my favorite scene in all of FMA for many reasons, and it's also the scene that sold me on this pairing completely. Then after that at the train station Ed's awkward but earnest promise that the next time she cries it'll be tears of joy - I got comboed into loving them basically. Right in time since that's when Winry realizes her own feelings, and I don't blame her - if someone said all of that to me I'd probably fall for that person without needing to know them all my life like she did. And basically every interaction between them after that point is just adorable. But I also love that earlier on, before Winry's realization, we already get a good ammount of time and development of their relationship that isn't explicitly romantic at first. Because that means that when the romance does happen, their relationship is already developped, so it doesn't come out of nowhere and feels natural, so when it does get explicitly romantic, and Winry wonders if she's been falling for Ed all this time, I'm actively rooting for it rather than wondering where that came from. And just to put the cherry on top they also get what might be the best confession scene I've seen. It's just so awkward but funny and sweet at the same time, and overall a show of their dynamic and natural chemistry together - sort of demonstrates in one scene how they work so well together. Definitely better than a cookie-cutter "I love you" would've been. There's also some discussion on why there wasn't a kiss at the end (there actuall isn't a single one in all of FMA), but, and I'm not entirely sure why, I think the hug works even better here. Manages to somehow feel even more intimate than a kiss would've been here, to me.

This is a *phenomenal* analysis of them; Arakawa absolutely goes above and beyond, building the truest and most deep, loving relationships throughout the series, and I have nothing but the highest respect for it Another relationship that struck me deep in the series (and stood as another testament of Arakawa’s brilliance) was Roy & Riza. I’d love to see an analysis of them too, seeing how romantic subtext for them is almost untouched, yet they still have the other strongest and most dedicated bond within the series.
