When ever I am in a bad mood I watch your videos and I am happy again! I made your soup and it was awesome. I added a few dried porcini mushrooms for the umami flavor - (it is an old Italian trick) and it adds a wonderful mushroom element. Thank you again Nyonya Cooking - I love you for sure

we donch have winter melon in yarmouth, nova scotia unless i go to the city. but i'm very lucky because the chinese restaurant here make these kinda chinese soup and they always give me a bowl or two. thanks for the recipe, will try it when i go to the city when the weather is warmer here.

Thanks for reminding of this soup! Will make it tonight. Just wanted to add something I used to see my Mom do. We have coil burners, so she would char the squid on them before adding into the soup. This created a more pungent smokey flavour and in a way - more aromatic and rustic :).

Mhhhhh so delicious!My parents are asian so we planted winter melon and always make soup out of it, it is really different from yours becuz our doesn't include any meat, but yours look so tasty...I have to try it out!!

Hi Grace. I just tried cooking this soup for the first time. I tasted and found it to be somewhat too sweet (from the carrots, dates) without any other contrasting flavors to balance it out. I also noticed that you didn't mention adding salt anywhere in the video. Well, what I did was I adjusted with some salt and found it to be more palatable. I also experimented with a small batch by adding more salt to see if it would taste better, but interesting enough, the more salt I added the worse the soup tasted which made me conclude that saltiness is NOT the primary flavor for this soup. I was wondering what is your opinion regarding the use of salt in this soup? Thanks in advance.

Irina Lau Hi Irina, this serves up to four people. As for the amount of water, I normally add an extra half a bowl of water to allow it to decrease as it cooks. Also, another tip is to get a really good stainless steel pot which is thick enough. Hope that helps!

WHat does winter melon taste like? Can you describe it or compare it to something? And what is the texture of the carrots in the end product? I imagine it to be veeery soft because it has been boiling for 90 minutes! Could I add the carrots at a later point of time?

it has a taste of cucumber but more juicy, it is like a "soup sponge" afterward. taste great . it a great combination with Hainan Chicken Rice/ chicken rice.

AnnK H It will be soft and not crunchy. But not so soft that everything will fall apart. As for winter melon, it really tastes like the rink of a water melon. :) It might be a little different from what you may already know or used to but give this a try. It's a nutritious soup :)

Hi. Great recipe!! I'm going to try it but I couldnt understand what to do after you add the melon. You said clearly " After 70 minutes boiling, Add the melon then....."????!!!! Did you say "let it cool about 20 or 30 minutes or let it cook about 20 or 30 minutes? then servie" Because at first you said to cook it 90 minutes?? Many thanks. I can't wait to try it. ;)
