I love this soup. I use salmon head in this soup instead of chicken. And I cook for 20-30 minutes in my instapot and 2 T fish sauce and about 13 dry Thai chilies 1/4c vinegar. Yummy. Thank you

My grandma used to make fish version of sour hot soup (酸辣汤 in Chinese), and she seasoned the soup with white peppercorn powder, vinegar and cilantro. Fish and cilantro are the key.

Thanks for the tip about the egg - I've never been happy with the end result by slowly pouring it in. I always use potato starch as I find the soup doesn't thin out when you add the vinegar so I can control the end thickness better with potato starch. There is a scientific reason behind vinegar 'cuting' the thickening component of corn starch. Hot and sour soup is so delicious - and so expensive in restaurants, so easy to make at home!
