genuine question. when it comes to the athleticism score how do they grade that and decide? Is there criteria being looked for or is it more of a gut feeling?

its based on for how long they can go full speed and power for aswell as how much power is in the techniques and stuff like that

In Karate, I'm not very sure about world championships but normally there are 4 criterias: balance, focus, dachi(Stance) and power. Additionally I believe precision as well.

A good comparison to other sports would be if the TV broadcast only showed the players without the ball. Or they showed the players with the ball, but didn't show any scoring lol

Hadouken lol? If you mean by 8:16, it can work in a real fight, but, honestly, it is very, very hard to explain how it would work in a comment. But it is basically a defense and attack with the palm of your hands. If it seems to don't work, it is because, like I said, it is very hard to explain that move without someone to use as a example, but it is, suprisingly, extremely pratical, even I doesn't understand that moves sometime ago lol.
