I see the broccolini and corn are in sauté pans. Is there any reason they couldn’t have been done on the griddle? Just easier to plate/remove?

Yes, absolutely they could have been done on the griddle. In this quick demonstration, the chef was showcasing the Wolf Dual-Stacked gas burners - high heat to very low heat (keeping something warm without scorching). Thanks for watching! Hope this helps.
