Made our Turkey Breast with this recipe and method yesterday. Got rave reviews! Many commented it was the very best Turkey they’d ever eaten (and this from a family of great cooks).

Can we get all the recipes you used in the Salt Lake City Nov 23 2021 Thanksgiving meal video? You have the turkey, Brussels sprouts, cornbread dressing listed but not the butternut squash tart or mashed potatoes…..thanks!

The video says convection steam but your written recipe calls for just convection: which one is it? The booklet that came with the CSO says 430 Convection humid mode. This is way too confusing bc even in the video they don’t recommend to go above 350. Please I’m planning on making my turkey in my new CSO. Tjx

Hi Sandrine, Sorry for the confusion, for roasting a turkey in the Convection Steam oven, the ideal mode will be the Convection Humid mode. To create the crispiest exterior, start the oven on a high temperature of 385oF for the first 20 to 30 minutes. Then turn the oven down to a temperature of 325oF and cook until the temperature probe, inserted so that the tip of the probe is in the thick meaty part of the breast near the base of the wing reaches a temperature of 155o F. Then remove the bird from the oven, cover lightly with foil and rest for at least 30 minutes prior to carving the turkey. Thank you please let us know if you have any other questions.
